Cheesy Cauliflower Breadsticks

Easy cheesy breadsticks without the bread. These Cheesy Cauliflower Breadsticks make a healthier alternative to your classic breadsticks. By using riced cauliflower for the base of these breadsticks, you can enjoy all of the flavors of your favorite breadsticks, without the carbs. These breadsticks are both gluten-free and low-carb making them perfect for everyone to enjoy with your favorite meals.

For the cauliflower, you can either rice them yourself, or you can use a bag of pre-riced cauliflower instead. Mix the riced cauliflower with eggs, half of the mozzarella cheese, minced garlic, and dried oregano. Press the mixture into a rectangle onto a greased baking sheet. Top with the remaining Shredded Mozzarella Cheese. Bake until the cheese has fully melted and the crust is lightly golden browned.

Ingredients

  • 4 cups riced cauliflower
  • 2 large eggs
  • 1 cup shredded mozzarella cheese
  • 2 cloves garlic, minced
  • 1 teaspoon dried oregano
  • 1 cup shredded mozzarella cheese

Instructions

  • Preheat oven to 400 F. In a large bowl, mix cauliflower with eggs, one cup cheese, minced garlic, and oregano.
  • Press mixture into a greased baking sheet. Top with shredded cheese. Bake for 25-30 minutes.
