Mediterranean Garden Salad

  Garden salad with romaine lettuce, tomatoes, and chickpeas makes a great healthy side dish or light summer meal. This salad is light and delicious with all of the flavors of a classic Mediterranean diet. All drizzled with a homemade salad dressing of olive oil and lemon juice. Serve with any meal for an easy summer dinner. It makes a great make-ahead dish, prepare the salad ingredients together and the salad dressing in another bowl. It is quick and easy to make this salad, instead of using a traditional head of lettuce, romaine lettuce is used. The lettuce is mixed with cherry tomatoes, sliced onion, chickpeas, crumbled feta cheese, and kalamata olives. Cover and refrigerate the salad until you are ready to serve. Whisk all of the dressing ingredients together in a small bowl. Just before serving, drizzle over salad.

  • 1 head rommaine lettuce
  • 1 pint cherry tomatoes, halved
  • 1/2 red onion, sliced
  • 1 ( 15 oz.) can chickpeas, drained
  • 1/2 cup feta cheese, crumbled
  • 1/2 cup sliced kalamata olives
  • 2 tablespoons olive oil
  • 2 tablespoons lemon juice
  • 1/2 teaspoon salt
  • 1/4 teaspoon ground black pepper
  1. In a large bowl, toss together lettuce, tomatoes, onion, chickpeas, feta cheese, and olives. In a small bowl combine olive oil, lemon juice, salt, and pepper.
