It is quick and easy to make this salad, instead of using a traditional head of lettuce, romaine lettuce is used. The lettuce is mixed with cherry tomatoes, sliced onion, chickpeas, crumbled feta cheese, and kalamata olives. Cover and refrigerate the salad until you are ready to serve. Whisk all of the dressing ingredients together in a small bowl. Just before serving, drizzle over salad.
Mediterranean Garden Salad
- 1 head rommaine lettuce
- 1 pint cherry tomatoes, halved
- 1/2 red onion, sliced
- 1 ( 15 oz.) can chickpeas, drained
- 1/2 cup feta cheese, crumbled
- 1/2 cup sliced kalamata olives
- 2 tablespoons olive oil
- 2 tablespoons lemon juice
- 1/2 teaspoon salt
- 1/4 teaspoon ground black pepper
In a large bowl, toss together lettuce, tomatoes, onion, chickpeas, feta cheese, and olives. In a small bowl combine olive oil, lemon juice, salt, and pepper.
