Cheese Dynamite Lumpia (Chili Cheese Stick)

Cheese Dynamite Lumpia is a green chilies lumpia recipe that is stuffed with mozzarella or cheddar cheese, and deep fried in vegetable oil. It is a popular appetizer in the Philippines, which is spicy, cheesy, and crunchy.

In the Philippines, I've learned that when youngster goes to the karaoke sing or to the bars to drink, the Dynamite Cheese stick is one of the common appetizers ordered by them. I remember back in College when I hang out with my friends in a karaoke bar, we always order this cheese dynamite while singing in the bar.

One reason is that it is very convenient to eat and it is budget-friendly among young adults. Also, if you love spicy and cheese, then you will certainly enjoy this finger food.

This is one of my favorite Filipino appetizers since it is easy to make. This is similar to any other lumpia dish except it contains green chilies and cheese. In this post, I am going to show my version of cheese dynamite.

Recipe Ingredient

Here are the ingredients you need to make this delicious dynamite cheese stick:

Green Chilies: I am using the Siling Haba or Siling Tagalog, which is a type of green chili found in the Philippines.

Cheese: There are two types of cheese I use for this recipe: Mozzarella and Cheddar Cheese. In another word, this Lumpiang dynamite is stuffed either with Cheddar or Mozzarella Cheese

Lumpia Wrapper: I am using a Filipino Spring Roll Wrapper which you can buy in any Filipino or Asian Grocery store.

Vegetable Oil: You will need any vegetable oil like canola to deep fry the chili cheese sticks.

Cooking Instruction

To cook cheese dynamite lumpia, there are 4 things you need to do: Removing the Seeds From the Chili; Stuffing it with Cheese; Assembling into a Lumpia; and Frying the Lumpiang Dynamite.

I. Removing the Seeds

  • Here what you are going to do is to slice the green chilies lengthwise from the stem down to the tip.
  • Next, use a small spoon to scrape the seeds from the chilies.

II. Stuffing it with Cheese

  • You will need to cut the cheese into a 1-inch width rectangle lengthwise.
  • After that, I stuffed it with either mozzarella or cheddar cheese.

III. Assembling into a Lumpia

  • Firstly, place the lumpia wrapper in a diamond position.
  • Next, I folded the left end of the wrapper to the center
  • After that, I put the stuffed lumpia into the center of the wrapper in a horizontal position. Make sure the stem remains outside of the wrapper.
  • And then lastly, roll the wrapper and secured it tightly with water.

IV. Frying the Lumpiang Dynamite

  • This part is very straightforward since I just poured vegetable oil into the pan and let it deep-fried till it turns golden brown.
  • Make sure you flipped to the opposite side and repeat the process.
  • Once it becomes golden brown, transferred it into the plate and served with mayo-ketchup sauce

Mozzarella vs Cheddar Cheese

As you can see in the picture, I stuffed the lumpiang dynamite with both mozzarella and cheddar cheese.

Based on my experience, I didn't notice any difference since they both taste the same. But the one that is stuffed with cheddar cheese is more cheesy and creamy compared to the one stuffed with mozzarella cheese.

Tips and Hints

  • To make sure it is secured tightly when rolling the water, use flour mixed with water or egg white.
  • Use a paper towel to absorb the excess oil when transferring the cheese dynamite sticks into the plate.
  • If the spring roll wrapper was stored in the freezer, let it thaw or defrost at room temperature for 30 minutes before using it. Forcing it to remove might cause the wrapper to break.
  • Make sure you remove the entire seeds from the chili pepper since this is what makes lumpiang dynamite too spicy.

Substitution

  • Green Chilies: You can use other kinds of green chilies like Jalapeno, Serano chilies, Chilaca, or Anaheim pepper.
  • Cheeses: You can use Provolone, Gouda or Burrata Cheese

Variation

Beef Lumpia- This is a type of Filipino meat lumpia that is stuffed with ground beef, vegetables, soy sauce, and oyster sauce

Vegetable Lumpia- This is a vegetarian lumpia that contains potatoes, carrots, green beans, and Filipino condiment sauce.

Frequently Asked Questions

1. How to store the uncooked cheese lumpiang dynamite?

If it is not cooked yet and you want to keep it for other days, you can store it in the plastic box container in the freezer. As long they were not fried yet, they can last in the freezer for as long as 3 months.

2. How do I reheat these chili cheese sticks?

You can reheat them using a microwave for 1 ½ minutes on a medium-high setting but the only problem is that they will not be crispy. For that, I will recommend reheating through an air-fryer for 5 minutes at 180 C.

3. How long does these cooked cheese dynamite last in the fridge and freezer?

If you store it in the fridge, it will last for up to 5-7 days. But if it is in the freezer, it will last for up to 1 month.

4. What do I serve this dynamite lumpia with?

Since this is just an appetizer or snacks, you can just eat this dish alone or serve with mayonnaise ketchup sauce

  • You can use other kinds of green chilies like Jalapeno, Anaheim pepper or Serano chilies.
  • If you don't have mozzarella or cheddar cheese, you can use Burrata, Provolone or Gouda Cheese
