Ingredients: •Fresh Salmon Fillet - 800g •Brown sugar - 3 tablespoon •Soya Sauce - 3 tablespoon •Honey - 3 tablespoon To Serve: •Fresh Rocket - 1 bag •Lemons, quartered - 2 •Cherry Tomatoes - 8 Cooking Procedure: Under cold running water rinse the salmon fillet and pat dry with kitchen roll. Mix the sugar, 2 tablespoons of the honey and soya sauce together. Thickly spread the mixture over both sides of the salmon. Cover and refrigerate for three hours at least (ideally overnight), turn it occasionally. At least an hour before removing it from the fridge. Put it into the smoker and drizzle with the remaining honey. Using apple wood, add wood chips to the drawer. Prepare your smoker to a temperature of 121C. On the grates place the fillet flesh side down. Smoke at least for 1 hour. Using oven gloves remove the grate from the smoke. Place a baking tray on top of the fish and then flip the fish and grate. The baking pan should be on the bottom with the fish on it. Refrigerate until ready to serve.
