Low Carb Creamy Cilantro Lime Chicken!!!!

Ingredients   [ For 4 to 5 people ]    [   Preparation time : 12 minute  –  Cooking time : 25 minutes  ]

  • 4 large Chicken breasts
  • 1/4 cup Coconut cream
  • 1 tbsp Lime juice
  • 1/4 cup Fresh cilantro (chopped)
  • 2 cloves Garlic (minced)
  • 1/2 tsp Sea salt (plus more for bringing chicken)
  • 1/8 tsp Black pepper
  • 1 medium Lime (sliced thinly)

Preparation Method

  1. Place the chicken breasts in a large bowl. Cover with water.
  2. Stir in a tablespoon of sea salt.
  3. Set aside to brine for 10 minutes.
  4. Meanwhile, preheat the oven to 450 degrees F. Line a 9×13″ baking sheet with foil or parchment paper (or skip this step if using a non-stick ceramic pan).
  5. Grease lightly.
  6. Stir together the coconut cream, lime juice, cilantro, garlic, sea salt, and black pepper. (You can heat the coconut cream first if it’s too stiff to stir easily.)
  7. When the chicken is done brining, drain the water and pat dry.
  8. Place the chicken on the prepared baking sheet.
  9. Pour the cream mixture over the chicken and spread evenly.
  10. Arrange lime slices on top in a single layer.
  11. Bake for 15-18 minutes, until the chicken is firm and done.
  12. Garnish with additional fresh cilantro.
