Dhaba style famous meat recipes

We always tend to stop at the highway dhabas during our road trips and gorge on the delicious dhaba food and mainly their meat dishes. Dhaba style Chicken curry

This spicy curry full of flavors will bless your taste buds that have been craving for the dhaba food.

Ingredients

  • 4 chicken leg pieces

  • 1 tbsp salt

  • 2 tbsp lemon

  • 2 tbsp ginger-garlic paste

  • 2 onions

  • 2-3 pieces ginger

  • 8-9 cloves of garlic

  • 7 green chilies

  • 3 tbsp oil

  • 2 tbsp cumin seed

  • 1 bay leaf

  • 1 cinnamon stick

  • 5 black cardamoms

  • 8 peppercorns

  • 4 cloves

  • 4 tomatoes

  • 1 tbsp turmeric powder

  • 1 tbsp red chili powder

  • 2 tbsp coriander powder

  • 1 cup water

  • 1 tbsp Garam Masala

  • 2 tbsp coriander leaves

For Marination

  • Tae a bowl and add the chicken in it. Add salt, lemon and ginger-garlic paste to it.

  • Mix well and keep aside to set for 30 minutes

  • Take onion, chili, ginger, garlic and grind them together to paste

For Curry

  • Take a pan, heat oil in it. Once the oil is warm enough add the cumin seeds, bay leaf, cinnamon sticks, black cardamom, peppercorns and cloves.

  • Saute the spice till golden crown and then add the onion paste to it.

  • Mix well and cover the pan for few minutes.

  • Then add tomatoes, turmeric powder, salt, red chili powder and coriander powder.

  • Saute the paste some more. Then add the chicken pieces to it and mix well.

  • Add some water to it to balance the consistency.

  • Transfer the mixture into the pressure cooker and cook for a while by adding garam masala and coriander.

For tadka

  • Take a heated pan and cook ghee add ginger and green chilies to it

  • Let is cook and then add to the curry. Cook till it come to the boil and serve hot.

Dhaba style Mutton Curry

The spicy yogurt cooked Dhaba Style Mutton is loved by every person irrespective of their age. So let us see the procedure of preparing this at home.

Ingredients

  • 500 grams mutton, cut into pieces

  • 5 garlic cloves, finely chopped

  • 2 onions, finely chopped

  • ¾ cup curd,

  • 1 tablespoon cumin

  • 1 tablespoon coriander powder

  • 4 cloves

  • Oil to cook as required

  • 3 green chilies

  • 1 teaspoon ginger

  • Coriander leaves

  • 2 tomatoes

  • 2 bay leaves

  • 3 cardamom,

  • 1 tablespoon red chili powder

  • 1 tablespoon turmeric powder

  • Salt to taste

Procedure

  • Take the meat and marinade it with yogurt, red chili powder, turmeric powder, cumin powder, coriander powder, and salt.

  • Mix everything well and set aside for 2 hours

  • Take a heavy bottom pan and heat oil in it. Add cloves, cardamom, bay leave, garlic, ginger and sauté it for few minutes.

  • After few minutes add chopped onion, green chilies and sauté them till they are brown.

  • Add the marinated lamb and cook till the lamb is tender

  • Once it is done add the tomatoes and green chilies and cook for 15-20 minutes

  • Now add some water and cook for another 15-20 min.

  • Add then and chopped coriander and cook for some more time.

  • Serve this dhaba style mutton curry with roomali roti, steamed rice or whole wheat laccha paratha topped with ghee.
