INGREDIENTS:
½ a lemon
Potatoes, thinly sliced
1 tablespoon olive oil
Ground black pepper and salt, to taste
2 fresh Salmon fillets
2 springs of tarragon/aniseed
¼ parsley, finely chopped
8 basil leaves
1 garlic clove finely chopped
METHOD:
Season the Salmon fillets with salt and pepper. Mix the tarragon, parsley, basil, garlic and a tablespoon of olive oil in a medium-sized bowl. Coat the fillets with the herb mixture. Place the salmon in a small baking dish and roast until the fish is flaky and almost cooked through for about 10 minutes. Remove the dish from the oven, cover with aluminum foil and set it aside to rest for 10 minutes. Fry the thinly sliced potatoes and season with salt. Squeeze the lemon on the fish and serve hot.
2. Fish stew with tomatoes, ginger, and potatoes
INGREDIENTS:
2 large potatoes, sliced
1 tablespoon olive oil
2 inches ginger, finely chopped
1 can of crushed tomatoes
1 cup chicken stock
½ cup water
¼ teaspoon crushed red pepper
Salt, to taste
Any deboned fish
2 tablespoons chopped parsley
METHOD:
Steam the potatoes. Mix the crushed tomatoes, chicken stock, ginger, red pepper, and salt. Simmer briefly. Add the fish and after a few minutes, the entire dish is done. It’s practically instant, low in fat, and satisfying.
3. Fish fillets in cherry tomato sauce
INGREDIENTS:
2 teaspoon olive oil
4 fish fillets
Salt and pepper, to taste
1 medium-sized onion, thinly sliced
600g cherry tomatoes
2 teaspoon finely chopped parsley
METHOD:
Heat olive oil in a nonstick skillet over medium-high heat. Season the fish with salt and pepper and place in skillet, skin side down. Cook until skin is browned and crisp for about 4 minutes. Remove from skillet and set aside. Add onions to pan and season with salt and pepper. Keep stirring until soft for about 4 minutes.
