Paneer Tikka| Barbecued Cottage Cheese By Jaanam Mehra

Paneer Tikka (Barbecued Cottage Cheese ) is the favorite snack served at almost every party and marriages in India. It’s mouthwatering taste is like a magnet, all people find this dish and wait patiently to get it. Panner tikka should be soft cubes cottage cheese (Paneer)  with onions, tomatoes, and capsicum, roasted or grilled together.

Paneer tikka (Barbecued Cottage Cheese ) is made is many ways, it can me made at home on tava, or it can make in the pan also. But the best taste one gets when its made on the charcoal grill. One cannot resist the aroma of spices through it.  So let’s try out Paneer Tikka (Barbecued Cottage Cheese ).

Ingredients:

500 gms of Large Cube of Cottage Cheese (paneer)
1   Large white Onion
1   Bell pepper (Green capsicum)
1   Bell pepper  (Red capsicum)
1   Large tomato

Ingredients for marinade:

  • ½ tbsp minced garlic
  • 1  Cup plain yogurt (Thick hung yogurt)
  • 2 tbsp roasted black gram powder
  • 1  tbsp red chili powder
  • 1/2 tbsp of grated ginger
  • ½  tbsp turmeric powder
  • ½  tbsp carom seeds (ajwaiin)
  •  Salt or to your taste
  • 2 tbsp crushed Dry Fenugreek leaves (Kasuri methi)
  • 3 tbsp of chaat masala
  • 1/2 tbsp garam masala or to your taste
  • 2 tbsp melted butter or ghee
  • Few drops of red food color (optional)
  • 2 tbsp of lemon juice.

Extras: 

Vegetable oil or melted butter for basting
5 to 6 wooden or metal skewers
Griller (Electric griller will also do) or Oven baking tray lined with aluminum foil
Chaat masala
Lemon or lemon juice for garnishing

Barbecued Cottage Cheese (Paneer tikkas) over the barbecue grill: 

You should grill paneer tikkas on outdoor grill (barbeque grill) for smoky flavor or over the stove top grill.

Mix all the ingredients and make a smooth pourable consistency marinade,  make the marinade few hours before, Pour this over the cubed Cottage cheese (paneer), capsicum/bell peppers, onion pieces into above and let sit for some time.

When ready to grill, soak the wooden skewers in water for at least 20 minutes (or else they will burn while on grill)

Arrange cottage cheese (paneer) pieces on metal skewers with the capsicums pieces, onions and set aside for around 1-2 hrs in a refrigerator if you can. (Notes: As  cottage cheese (paneer) is very soft and can break very easily so arrange carefully.)

Now if you are going to prepare your Barbecued Cottage Cheese Panner tikka on a charcoal grill, then light the charcoal (Koyla) and wait till it gets burnt and there is a white coating of ash on all the charcoal pieces (Koyla).

Place the cottage cheese (paneer) tikka skewers over the grill and keep rotating it, so that it won’t burn. Keep doing it till your cottage cheese (Paneer) become light brown from the edges and onions will be soft.

Now remove onto a plate and sprinkle some Chaat Masala. Squeeze some lemon juice over the paneer skewers, garnish with lemon wedges, Green mint chutney and serve piping hot!

The same can be done on the gas stove also by placing a gas stove grill on gas.
