Plain Groundnut Sauce

The plain Groundnut sauce is a simple go-to recipe that can serve as accompaniment for variety of meals and can be suited to any cook’s delight. For instance, you can use lots of protein in the recipe or you can choose to have it ‘plain’ as the name implies. You can add diced peppers or you can stay away from the peppers if you do not like your food hot and spicy.

In the recipe described below, crayfish was used as the protein but shredded beef or chicken can be perfectly substituted to make the recipe taste even better.

Also, for this sauce, there is the need for groundnut paste which can be made at home by following the guidelines provided in this recipe of Nigerian Groundnut Soup (Omisagwe).

Unlike omisagwe which requires palm oil to make the colour pop and lots of bitter leaf for garnishing, this plain groundnut requires groundnut oil or any other plain oil, does not require bitter leaf and it can be prepared within 20- 30 minutes.

One thing that is certain is that you will love the nutty taste of this sauce and will crave for more.

Plantain Groundnut Sauce

Equipment

  • Blender for making groundnut paste

Ingredients

  • 1 cup roasted and peeled groundnut
  • 3 Yellow habanero
  • 2 small Sweet red pepper
  • 1 medium-size Onion
  • A handful Jumbo crayfish
  • A pinch Ground dried herbs to add flavour
  • 1/2 African nutmeg locally known as ehuru optional
  • 1/2 cup Meat stock
  • Salt to taste

Instructions

  • By following the step-wise guide described in How to Cook Groundnut Soup (Omisagwe), prepare groundnut paste by blending groundnut, crayfish, ehuru, onion, yellow habanero, red pepper.
  • Dice 1 yellow habanero as well as 1 small red pepper and prepare about 5-6 well-cleaned crayfish to be set aside.
  • In a clean dry pot, add 2 tablespoons of groundnut oil and briefly sauté the diced peppers and crayfish with a pinch of salt and ground dried herbs such as scent leaf.
  • Remove the sautééd ingredients, pour in the groundnut paste into the pot, and add a half cup of water as well as additional salt (if needed) to taste.
  • Stir and cook on moderate heat for about 5 minutes. Pour in the fried ingredients and stir into the groundnut sauce.
  • Serve gracefully with boiled white rice, bread, potato, or yam.

Notes

If you don’t like hot and spicy sauces, you can leave out the diced yellow habanero from the recipe.
