Chicken noodle Soup is an absolute fall/winter staple. The nutrients from homemade chicken soup provide the nourishment and vitamins you need to help you heal from a cold. Its also great for warming you up on a chilly day. But when you get tired of traditional chicken noodle soup, what can you do to change it up a bit?
Here is an easy chicken soup recipe and five ways to spice it up:
Play with Herbs & Make it Spicy
Herbs are the age old way to change up the flavour of anything. Add a spicy twist to something as well to give it that heat and clear your sinuses.
Add thyme, scallion, and a pack of Pumpkin Soup to add a Caribbean twist to it. Add a scotch bonnet pepper for that spice. Be careful not to chop it up!
For an Indian flavour, add a teaspoon of curry powder. Turmeric which is a main ingredient in curry powder has health benefits such as increasing your antioxidant capacity and other medicinal properties.
To give your soup a Thai-inspired kick, add 1/2 cup of coconut milk and a tablespoon of red chill paste to the soup. When serving, add some cilantro and lime juice. To make it spicy, add red or green thai chilis in the mix.
Not feeling these? Play with your spice drawer by adding oregano, parsley, and dill. You can always use red pepper flakes to bring the heat to your soup.
Load up on Veggies
A traditional chicken noodle soup has carrots, celery, and onion. If you want that extra burst of vitamins, don’t be afraid to toss in extra vegetables. Throw in some chopped kale or spinach for that Vitamin A,C, and K. If you’re feeling like you want something more substantial, add squash, potato, or pumpkin. These will make your soup chunkier and a bit thicker.
Don’t have time for all that chopping? Grab a bag of frozen peas and corn and toss that in. Let it cook for the directed time.
Switch Up the Noodles
Instead of egg noodles, play with different shapes like shells, macaroni, or alphabet noodles.
If you’re feeling a more asian inspired soup, add buckwheat or rice noodles in the mix (do this in the final minutes of course).
If you’re not a noodle fan at all, try using wild rice or quinoa for a healthier substitute. Quinoa has many benefits to it such as additional protein.
If you don’t want your soup to get super starchy and thick, try boiling the noodles/rice/quinoa separately and then serving it with each bowl of soup.
Make it Creamy
Sometimes we want a richer, savoury flavour to our soup. Well good news, chicken soup can be made into a creamier version.
All you have to do is make a roux while you sauté your vegetables. When you are done, slowly pour the chicken broth in so it becomes thicker. Add 1/2 cup of milk or heavy cream to get that rich white colour. For extra depth, dice up a potato and add it into the soup. Allow it to come to a boil then simmer it for 10 minutes.
Add Some Ginger
Ginger is one the most amazing things out there. With its numerous health properties such as settling a queasy stomach and reducing bloating, ginger is one superfood you definitely want to throw into your soup.
To get that ginger flavour into your soup, grate some ginger and cook it with your aromatics so that the flavour comes out. Once you add the chicken stock the ginger will have to time to spread its flavour throughout your soup. If the flavour of it isn’t your thing but you want to take advantage of the benefits, dilute your soup with more water or chicken stock.
