This Salad is a best choice when you have visitors for supper as well as have a great deal of various other dishes to prepare. You can make the dressing a day or two ahead if you like.
1 1/2 mugs icy raspberries, thawed
2-4 tbsps orange juice (depending upon thickness wanted), begin with 2 tablespoons
1 tbsp gewurztraminer vinegar
1 teaspoon sugar
1 tablespoon orange zest
4 tbsps sliced fresh chives
1 pound romaine lettuce, washed, dried, and torn into bite-sized pieces
1 pound radicchio, cleaned, dried out, shredded
3 carrots, peeled and grated
1 mug mandarin oranges, drained, patted dry
20 cherry tomatoes, quartered
- Assemble salad ingredients in salad dish, toss.
- Put all ingredients for the clothing in food processor or mixer other than 2 tablespoons chives, and process.
- After all is processed, mix in the remaining 2 tablespoons chopped chives.
- Pour over salad prior to offering and toss.
