Eat Like You Give A Fork Cookbook Available Now

“Eat Like You Give A Fork..the real dish on eating to thrive” cookbook is now available. Congratulations to Mareya Ibrahim on creating super healthy dishes that are super delicious. She hopes that you will use the book as a reference book, a cookbook and her own story as an inspiration.

Mareya Ibrahim is The Fit Foodie, Mareya Ibrahim a nationally recognized food safety and clean eating expert, an award-winning entrepreneur, television chef and author.

She is the author of “The Clean Eating Handbook,” a signature chef to the NY Times bestseller “The Daniel Plan: 40 Days to a Healthier Life” by Rick Warren, Dr. Daniel Amen and Dr. Mark Hyman and a contributor to Recipe Rehab. Chef Mareya is the host of “The Real Dish” Podcast, was a featured chef on the Food Network, eHow.com, Livestrong.com. and the Emmy-nominated cooking show, Recipe Rehab. Chef Mareya has been a keynote or featured speaker for dozens of events, including the Sustainable Foods Summit, The Green Festival, The California School Nutrition Association Conference, The Fit Expo, and The Daniel Plan.

For me, it is wonderful that a cookbook is inspirational, but the recipes also have to be really, really good. That is exactly what Mareya Ibrahim’s recipes are REALLY GOOD! The first recipe I tried was the Kaniwa and Fresh Herb Tabbouli. Quinoa can be substituted for the Kaniwa. Mareya calls kaniwa “quinoa’s cute little sister”. She lets the kaniwa, herbs and lemon juice be the stars of the salad so it is fresh, crisp and flavorful. So easy to make too.

Living in Southwest Virginia, I sometimes do not have ready access to uncommon ingredients. I can order ingredients on-line but that takes pre-planning and I often enjoy cooking on a whim. I asked Chef Mareya if I can substitute certain ingredients in her Tabbouli recipe and was pleased to receive her reply (I was thinking about using regular garlic and pearl couscous in the salad): “Absolutely, you can sub regular garlic, I’d recommend quinoa which is widely available and is gluten free instead of pearl couscous as a sub for the kaniwa.  This will not make a real nutritional difference – black garlic is fermented so you get that probiotic benefit but other than that, not much.” I get the impression that she is genuinely interested in her readers success in making her recipes and “resetting our tastebuds” with her fun and holistic approach to food.

So happy to see Shishito peppers featured in this cookbook! One of my favorite varieties of peppers because they are mild and you can eat the entire pepper. Lime zest and lime juice makes the flavor of the shrimp and peppers POP!

Best Blender Gazpacho

Chef Mareya’s blender gazpacho was so easy to prepare and SO DELICIOUS that we ate it for breakfast, lunch and dinner until it was all gone. I kept it in mason jars in the refrigerator. Looking forward to making this recipe a lot this summer! So cool, crisp and refreshing.
