Freiburg Absinthe tasting notes by Marc Thuillier

Another Organic Absinthe you shall say, one more on the list… Yes but! The Freiburg Absinthe comes from Germany and more importantly, it’s distilled with a grape pomace alcohol base, a very well known alcohol in Italy under the name Grappa. Absinthe + Germany + Organic + Grappa = way too many things? Do not draw conclusions too hastily and see my tasting notes instead.

This absinthe is made by Andreas Dilger, a very renowned winemaker in the Freiburg region of South Germany. He’s most well-known for his organic wines derived from biodynamic viticulture.

Color: a limpid clear absinthe.

Aroma before water: a very nicely inviting presence of the grappa, together with a bouquet of herbs in the background.

Louche: some beautiful white clouds at the beginning, and then the drink quickly becomes opaque without being milky.

Aroma after water: the grappa takes all the available space this time.

Taste: in mouth it’s a pleasant surprise as the grappa is far less invasive than at nose, it has a companion role rather than a domineering role, which is a very good thing. The bouquet of herbs is pleasant and harmonious, and anise – cement of all absinthes – comes out nicely. It’s round, fruity, and simply delicious.

Finish: anise stays stuck on the palate. The finish is very long and is perfectly escorted by the grappa.

Conclusion: I 100% validate this audacious organic absinthe. It has a strong character that may displease some (and yet I think it is its main force), but if you like the Enigma Blanche, then jump on the Freiburger!

How to fully enjoy Freiburg Absinthe

Important advice: drink a glass or two from your newly opened bottle, the grappa will be quite powerful at first. Then let the bottle sit 2 weeks quietly in your cabinet, it will harmonize itself over time. Drink it preferably without sugar to fully enjoy its character, it is fruity enough anyway.
