Homemade Pimento Cheese

I love Homemade Pimento Cheese, store bought is just not the same.  I like my pimento cheese a little thicker because I like to eat it on crackers instead of bread, but this is just as yummy on bread only it might need to be warmed just a little in the microwave for easier spreading if it has just come out of the refrigerator.
Ingredients:

  • 1 8oz cream cheese softened
  • 2 cups extra sharp cheddar cheese
  • 1 cup mild cheddar cheese
  • 1/3 cup mayo, may use more
  • 1 4 oz jar pimentos
  • 1/8 to 1/4 tsp garlic powder
  • 1/4 tsp black pepper
  • 1/4 tsp paprika

Directions:

  1. Beat cream cheese until creamy.  Add cheese and spices and continue beating until light and fluffy.  Stir in pimentos and chill one hour before serving.

My favorite way to eat this pimento cheese is on crackers as it is a little thicker than some other recipes.  If it has been in the refrigerator leave it out for 15 minutes or warm in the microwave a few seconds if you are going to have it on bread.  If it is thicker than you like, add more mayo to your liking.

This would be great served at a party or shower with crackers or toasted bread OR if you want to take it up a notch it would make one heck of a delicious grilled cheese!
