Pumpkin Chocolate Chip Muffins

I love making treats for my family and I love it when my girls help me in the kitchen whenever I am baking.  I hope it is something they will continue to love as they get older.

One of their favorite things to assist me with in the kitchen is making Muffins.  Their favorite is my chocolate chip banana muffins but since it’s now officially Pumpkin season I thought I would change it up a bit and do pumpkin muffins instead.  I’ll be honest, I wasn’t sure they would even like pumpkin muffins, however, I am happy to report that they loved them!  It’s safe to say that these muffins are a new fall favorite around here.

Ingredients:

3/4 cup pumpkin puree

1/2 cup granulated sugar

1/4 brown sugar

1/4 cup vegetable oil

1 egg

1/4 cup water

1 1/2 cups AP flour

1/2 tsp baking soda

1/2 tsp pumpkin pie spice

1/2 tsp cinnamon

3/4 tsp baking powder

1 tsp vanilla extract

1/4 tsp salt

Directions:

Preheat oven to 350 degrees.

Grease muffin tin or use muffin liners.  I love these silicone liners!

Mix granulated sugar, brown sugar, oil, vanilla and egg.

Once combined add pumpkin and water, mix til combined.

In a separate bowl stir together flour, baking soda, baking power, cinnamon, pumpkin pie spice and salt.

Slowly add flour mixture to wet ingredients, til combined.

Mix in chocolate chips.

Scoop into muffin tins about 2/3 full.  You should get approximately 15 muffins.

Bake at 350 degrees for 17-20 minutes. *Baking times may vary with different ovens so keep a check on them.

Let muffins cool, then enjoy!
