Pumpkin Chocolate Chip Cookies

I love a good Chocolate Chip Cookie just about any time, but once the leaves start to change colors and there is a crisp in the air, just any chocolate chip cookie won’t do – it has to be a pumpkin chocolate chip cookie!

These cookies are a cakey cookie, which I usually don’t prefer, but these I absolutely love!  If you are like me and do not prefer a cake-like cookie, then you may not like these. But I do suggest you try them… maybe you will love them as much as I do.

Ingredients:

  • 1 cup pumpkin puree
  • 3/4 cup granulated sugar
  • 1/4 brown sugar
  • 1/2 cup vegetable oil
  • 1 egg
  • 2 cups all-purpose flour
  • 2 tsp baking powder
  • 1 tsp ground cinnamon
  • 1 tsp pumpkin pie spice
  • 1/2 tsp salt
  • 1 tsp baking soda
  • 1 tsp milk
  • 2 tsp vanilla extract
  • 1 1/4 cup semi-sweet chocolate chips

Directions:

  1. Combine pumpkin, egg, white and brown sugar, vanilla and vegetable oil in a large bowl.
  2. Dissolve teaspoon of baking soda in teaspoon of milk, then stir into pumpkin mixture.
  3. In separate bowl stir together flour, baking powder, cinnamon, pumpkin pie spice and salt.
  4. Add flour mixture to pumpkin mixture and mix well.
  5. Stir in chocolate chips.
  6. Drop by teaspoon onto greased cookie sheet.  (These won’t spread a lot)
  7. Bake at 350 degrees for approximately 10 minutes or until edges start to brown.
