Pumpkin Chocolate Chip Cookies
I love a good Chocolate Chip Cookie just about any time, but once the leaves start to change colors and there is a crisp in the air, just any chocolate chip cookie won’t do – it has to be a pumpkin chocolate chip cookie!
These cookies are a cakey cookie, which I usually don’t prefer, but these I absolutely love! If you are like me and do not prefer a cake-like cookie, then you may not like these. But I do suggest you try them… maybe you will love them as much as I do.
Ingredients:
- 1 cup pumpkin puree
- 3/4 cup granulated sugar
- 1/4 brown sugar
- 1/2 cup vegetable oil
- 1 egg
- 2 cups all-purpose flour
- 2 tsp baking powder
- 1 tsp ground cinnamon
- 1 tsp pumpkin pie spice
- 1/2 tsp salt
- 1 tsp baking soda
- 1 tsp milk
- 2 tsp vanilla extract
- 1 1/4 cup semi-sweet chocolate chips
Directions:
- Combine pumpkin, egg, white and brown sugar, vanilla and vegetable oil in a large bowl.
- Dissolve teaspoon of baking soda in teaspoon of milk, then stir into pumpkin mixture.
- In separate bowl stir together flour, baking powder, cinnamon, pumpkin pie spice and salt.
- Add flour mixture to pumpkin mixture and mix well.
- Stir in chocolate chips.
- Drop by teaspoon onto greased cookie sheet. (These won’t spread a lot)
- Bake at 350 degrees for approximately 10 minutes or until edges start to brown.
