Roasted Carrot French Fries

I was looking on Pinterest for a way to use up some carrots.  After all, I had about 3 bags in my fridge (what was I thinking when I was grocery shopping????)  I discovered Carrot French fries! Mmmm, that should be pretty good, right?

I sliced some carrots into french fry like shapes.

and I drizzled olive oil over top of them.  Then I sprinkled garlic powder, onion powder, turmeric, salt, and pepper.

I baked them in the oven on 400 degrees for 25 minutes.

They truly were a hit!  My husband absolutely loved them!  What a healthy, tasty, unusual way to eat your veggies!

Ingredients:

Carrots

Onion powder

Garlic Powder

Turmeric

Salt

Pepper

1. Cut your carrots into fry shape pieces.  I cut them lengthwise and then would cut them lengthwise again 1 or 2 times depending on the size of your carrot.  Then cut them in half so your long slender carrot pieces are the length of an average french fry.

2. Place your carrots on a baking sheet & drizzle olive oil over top of them.  Then sprinkle on onion powder, garlic powder, turmeric, salt, and pepper.  I don’t measure - I just sprinkle some on until it looks like enough to me.  As long as you’re not dumping tons of seasoning on your fries, you’ll be happy with the end result.

3. Bake at 400 for 25 minutes.
