Although making refried beans from scratch is ideal, we don’t always have the time for that so we turn to this simple recipe for Semi-Homemade Vegetarian Refried Beans in 30 Minutes. Packed with protein, and amazingly bold flavors, these beans deliver a vegetarian side dish that’s lower in fat and sodium than traditional recipes.

Vegetarian Refried Beans in 30 Minutes

Prep Time: 10 minutes

Cook Time: 20 minutes

Total Time: 30 minutes

Ingredients

  • 2 cans no salt added pinto beans, drained
  • 1 small onion, diced
  • 1 tbsp avocado oil
  • 1 can No Salt Added Ro*tel®, drained
  • 1-8 oz can no salt added tomato sauce
  • 1 tbsp chili powder
  • 2 tbsp ground cumin

Instructions

  1. In a blender or food processor, process the drained beans until just lumpy, but creamy, and set aside.
  2. In a medium-sized sauce pan over medium heat, heat the oil, then reduce heat to medium-low and sauté the diced onions until tender, about 5 minutes.
  3. Add the processed beans to the sauce pan and stir.
  4. Add the tomato sauce, Ro*tel, chili powder, and cumin, and stir to thoroughly combine.
  5. Simmer over low heat for 15 minutes.
  6. Serve warm and enjoy.
