Pimm’s Cup Boozy Popsicles

We all enjoy a classic Pimm’s Cup on a hot summer day so why not try an exciting twist on the cocktail and make these Pimm’s Cup Boozy Popsicles packed with fresh seasonal fruit? They are super easy to make, look amazing, and are so delicious!

One of the things I love about summer is the abundance of berries that are available; blueberries, raspberries, and especially Strawberries. Shiny, red, plump, and juicy, strawberries just sum up hot, lazy summer days perfectly.

Every year I take the kids strawberry picking and for days after, we gorge on strawberries served with a sprinkle of sugar and drizzled with cream, strawberries whipped up into frothy milkshakes, or strawberries frozen into fruity ice cream. All of them are yummy, but this year I hoarded a few of those strawberries for myself to make these Pimm’s Cup Boozy Popsicles for the adult only crowd!

We don’t tend to think of grown ups and Popsicles in the same sentence, do we? That is all about to change once you try these Pimm’s Cup Boozy Popsicles! Packed with hoards of juicy strawberries, along with kiwi and blueberries for a zing of color, these frozen treats give you a healthy dose of fruit with a great hit of vitamin C. Topped up with refreshing lemonade and a decadent splash of Pimm’s Strawberry, these are popsicles to relax with and savor.

Pimm’s Popsicles are so quick and simple to make, it’s easy to whip up a batch whenever you fancy, and because they look so pretty and taste amazing, these are the perfect treat to serve friends at a summer party too.

Pimm’s Popsicles

Ingredients

  • Pimm's standard or strawberry
  • lemonade
  • 2 kiwi fruit
  • 2 cups of strawberries
  • 1/2 cup blueberries
  • popsicle maker

Instructions

  1. Slice the strawberries and kiwi fruit.
  2. Loosely fill the popsicle moulds with all of the fruits. You can put them in randomly or in layers. I love to stick the kiwi slices to the side of the molds before adding the rest of the fruit because they look so lovely when they're frozen.
  3. Mix up the lemonade and Pimm's to your desired strength. A two to one ratio works well.
  4. Fill the popsicle molds with the Pimm's mix and put them in the freezer to set for a few hours or overnight.

Notes

Home Chef Tip: You can easily make these popsicles kid friendly by simply omitting the Pimm's and substituting it with just lemonade or with their favorite fruit juice.
