With the combination of marshmallows and cream, juicy, sweet strawberries, and a perfect buttery, flaky pie crust, you definitely can’t go wrong bringing this to your next gathering (or making it for yourself…no judgment here).

My grandmother, the one who made me completely fall in love with cooking, has been making this pie since I was a young child, and it never, ever seems to get old. For as long as I can remember, I’ve always had a love affair with sweets, but especially classic berry desserts that remind me so much of New England, where I grew up and still live. Even as an adult, I naturally gravitate towards them. Perhaps because they make me reminisce about my childhood.

I can remember picking blackberries on my grandmother’s front lawn, begging my mom to take me to my great grandmother’s house to let me pick raspberries, and also speeding to a neighbor’s house on bikes with the other kids in my neighborhood to pick more fresh berries from their backyard. This pie is most delicious in the summer months when berries are at their very ripest and juiciest, but the truth is, this pie is so delicious and crave-worthy that my family makes it year round.

As a child, I would lick my plate clean while the adults around me laughed, meanwhile patiently waiting for everyone to be served so I could ask for seconds. So good that as a child, on my birthday, when I would have a regular homemade cake made by my mom, I would also request ahead of time from my grandmother that my birthday present from her and my grandfather be this pie.

Luckily for my grandmother (and all of you), this dessert is extremely easy to make. I like to prepare the crust a day ahead of time (or use a store bought crust) to make this dessert even easier to make. Not a strawberry person? No problem. I’ve substituted blackberries, blueberries, and raspberries for the strawberries, all with great success (although strawberry is the best, in my opinion).

Whether you make this for a family reunion, for a loved one’s birthday, or just to celebrate summer, this pie is sure to leave your taste buds happy. Enjoy!

Strawberry Marshmallow Pie

Yield: 6-8

Home Chef Tip: To make your life even easier, prepare both filling and crust ahead of time, and pour filling into crust an hour before you're ready to serve.

Ingredients

  • 18-22 marshmallows
  • 1/4 cup milk
  • 1/4 cup sugar
  • 3 cups chopped strawberries
  • 1 cup heavy cream
  • 1- 8 or 9 inch pie crust (already cooked)

Instructions

  1. Combine marshmallows, milk, and sugar in a microwaveable bowl and microwave for 1 minute (in 30 second intervals).
  2. Stir until melted (heat 15 seconds more if needed).
  3. Chill until COMPLETELY cold.
  4. Scrape sides and beat with an electric mixer.
  5. Add 1 cup of heavy cream. Whip until very stiff.
  6. Add chopped strawberries and stir with a wooden spoon until blended.
  7. Pour into cooked pie crust and garnish with extra strawberries or mint, if desired.
  8. For best results, chill for 1 hour.
