It’s football season! Football is my favorite sport so I look forward to this time every year. Even if you’re not watching the game, I love having a reason to hang out with friends and family every week. Plus, it takes the sting off of summer being over.

Did I mention the food? Summer may be over, but there’s still plenty to grill if you’re tailgating! If you’ve never tailgated before, try it this year. Getting together before the game with some food is a great way to connect with friends before the cheering drowns out conversation. It puts everyone in the team spirit and you still leave with happy memories, even if your team loses.

The Perfect Beer Brats for Tailgating!

Being from the Midwest, no tailgate party is complete without these grilled Beer Brats. Uncooked bratwursts are boiled in beer with onions until tender and juicy. Then, they get a quick turn on the grill to char them up. Those softened onions then become a delicious condiment for your brats. It’s traditional to serve these with mustard, but I like ketchup too.

The beauty of this recipe is that it’s easy to prepare ahead of time. The brats can be boiled the night before and refrigerated. It’s easy to pack them up in the cooler along with your condiments. Since the Beer Brats are already cooked, they only need to be browned and warmed. Easy peasy! This recipe easily doubles or triples as well.

One final note: You won’t taste much of the beer after they are cooked, so no need to use any special type. The main purpose of the beer is to tenderize. Also, the alcohol burns off so they are safe to consume by children and those avoiding alcohol.

Beer Brats

Prep Time: 5 minutes

Cook Time: 25 minutes

Total Time: 30 minutes

Yield: 4


  • 1 large onion
  • 1 pound uncooked bratwurst
  • 2 tablespoons butter
  • 2 cans of beer
  • Buns, for serving
  • Mustard, for serving


  1. Peel and slice the onion in 1/2-inch thick rings.
  2. In a medium pot, place the onion, bratwurst, and butter. Cover with the beer and bring to a boil. Lower to simmer and cook, uncovered, for 15 minutes, or until brats are cooked through.
  3. Strain the liquid, reserving onions and brats. Brats may be grilled immediately, or refrigerated until ready to grill.
  4. When ready to grill, preheat grill on high. Cook brats on all sides until dark golden and warmed through.
  5. Serve on buns with reserved onion and mustard.


Home Chef Tip: Too cold to tailgate? Want to "homegate"? You can brown these brats up in a skillet over medium heat after boiling and serve.
