Brunch Recipe: Mini Banana Breads!

Having lived abroad for quite a while, there are things that somehow trigger some serious cravings for me. It can be a smell, a song, a picture…Suddenly I really want a certain food. Yesterday I woke up and heard the rain falling down outside and my brain somehow drew the conclusion: rainy sunday morning = warm Banana bread! Living in Italy, going to the coffee shop and get some wasn’t going to happen and making a whole loaf of banana bread would have taken me at least 1 ½ hours…what to do, what to do… Mini Banana Breads were the answer! Ready in under half an hour and great for a brunch with friends! 

Preparation Time: 10 minutes
Baking Time: 20 minutes  ​      
Ingredients (12 mini loafs):

  • 2 overripe bananas 
  • 110 g sugar
  • 50 g butter (+ butter for greasing)
  • 1 egg
  • 1 pinch vanilla
  • 45 ml buttermilk
  • 150 g plain flour
  • 1/2 tsp bicarbonate of soda
  • 1 pinch salt



Preheat oven to 180 °C

  1. Cream the butter and sugar until well combined.
  2. Add mashed bananas, buttermilk, egg and vanilla.
  3. In a separate bowl, sift the flour and bicarbonate of soda and add salt.
  4. Fold the flour mix in the wet mix.
  5. Grease little cake moulds (silicone moulds work best in my opinion).
  6. Bake for 20 minutes.
