Risotto with Porcini Mushrooms

Autumn in the Italian region Emilia means also mushroom season, especially popular are the fragrant Porcini Mushrooms that can be found in many parts of the region. These mushrooms are usually rather expensive but around this time of the year you get great offers at the markets. So I stock up on Dried Porcini Mushrooms and make immediately a lovely risotto. This is also a recipe close to my heart. It's pretty much the first dish I cooked all by myself after I moved away from home for university and even today it's the dish friends and family ask me to make for them :-)

Preparation Time: 10 minutes
Cooking Time: 20 minutes       ​  
Ingredients:
  • 250 g arborio rice
  • 50 g dried porcini mushrooms
  • 1 big onion onion, finely chopped
  • 2 garlic cloves, finely chopped
  • 30 g butter
  • 350 ml vegetable stock
  • 150 ml white wine
  • 50 g parmesan cheese, grated
  • salt and pepper

Directions:
  1. Put the dried mushrooms in a large bowl and pour over hot water. Let soak for 20 minutes
  2. Take the mushrooms out of the water, squeeze the water out of them and set them aside.
  3. Not everybody agrees on using the mushroom liquid in the risotto but I personally do use it. Before, I filter the water with a coffee filter.
  4. ​Heat half of the butter in a saucepan and fry the onions and garlic until soft, then add the rice and fry for 2-3 minutes, stirring continuously.
  5. Add the mushrooms and keep frying for 1-2 minutes.
  6. Add the wine and boil until evaporated.
  7. Reduce heat to medium heat and add some of the vegetable stock and the mushroom liquid and simmer. 
  8. Keep adding the liquids until the rice has softened.
  9. When the rice is almost cooked add the cream.
  10. When the rice has a creamy consistence, add the remaining butter, half of the parmesan and salt and pepper to your liking.
  11. Sprinkle with parmesan cheese and serve immediately.
