Summer Rolls with Shrimp

When it's hot and you don't want to turn on the oven or stove you are usually left with the choice of salad or sandwiches for dinner. Summer Rolls are great alternative. They are light, relatively easy to prepare, super yummy and also a great option for a starter when you have guests for dinner as you can prepare them ahead and just put them in the middle for everyone to share! Well to be honest you'll have to turn on the stove for 3 minutes or you could also make vegan summer rolls. :-) Here is the recipe for the version with shrimps and an idea for a spicy soy sauce dip. Let me know how they turned out!

Preparation time: 20 minutes
Ingredients (for 20 summer rolls):

  • 20 rice paper sheets
  • 300 g shrimps (cleaned, or you defrosted frozen ones)
  • 2 medium carrots , grated
  • 1/2 cabbage, shredded
  • 50 glass noodles
  • 1 small red chili (finely chopped)
  • 3 tbsp soy sauce
  • 1 tbsp sesame oil

For the dipping sauce;
  • 8 tbsp soy sauce
  • 2 tbsp sesame oil
  • 2 tbsp fish sauce
  • 1 clove garlic, crushed
  • pinch of ginger powder
  • squeeze of lime
  • 1 small shallot or spring onion, chopped into fine rings


Directions: 

Start by preparing all the ingredients:
  • Prepare the veggies
  • fry the shrimps and cut them in small pieces
  • put the noodles in a heat proof dish and soak them in hot water for 5 minutes, then drain them and rinse under cold water
  1. Mix all the the ingredients you prepared and toss with the soy sauce and oil 
  2. Prepare a bowl with cold water for the rice paper sheets
  3. soak a rice paper sheet for a few seconds in the water, when it starts to soften take it out and place it on a plate or chopping board
  4. Place a tablespoon of the shrimp, noodle and vegetable mix in the centre, then roll it up; First fold in the right and left side, then fold the bottom part over the filling and roll it up


For the dip:

Simply mix all the ingredients together. Add the shallot or spring onion rings last.
