Chili Garlic Prawns

One of the things I love most about living in Italy is the huge choice of fresh Seafood, especially in summer. Even though I live two hours from the sea, seafood arrives daily and brings back memories of weekends and holidays by the seaside. The best thing is that fresh fish and shellfish is really quick and easy to prepare, It actually has to be if you ask me. I like to keep it is as simple as possible, after all you don't want to cover up those beautiful falvours! Today I share a recipe for a starter with you that is also great to make when you have guests. It's done in under 10 minutes, so you don't have to sweat in the kitchen but can enjoy time with your friends.

Preparation: 5 minutes
​Cooking time: 3 minutes
Ingredients (serves 4):

500 g prawns
20 g butter 
2 tbsp butter
1 large garlic clove
1 tsp dried chili
2 tbsp sherry (medium dry)
1 squeeze lemon

  1. Rinse and dry the prawns and set aside
  2. ​Heat the butter and olive oil in a large pan.
  3. Add the garlic
  4. Add the prawns and toss in the butter-oil mix for about 1 minute 
  5. Add chili.and lemon juice
  6. Add the sherry and everything cook for 2 minutes. 
  7. Turn off the stove and sprinkle with parsley
  8. Remove the garlic
  9. Serve with lemon to drizzle over the prawns
