one more time Muffins, this time in a savory version. since i got a bit sloppy with my diet due to rushing home from the office, grabbing a bite to eat and then running to teach yoga, i had to act. that’s why i now prepare my office lunch the day before. to get some inspiration i got 2 books with lots of office lunch ideas.
first i made these Savory Muffins with zucchini, feta and sundried tomatoes. just to my liking, they are quite handy and easy to transport. of course you can make a mini version of them as well, that way they are the perfect fingerfood for a party or a snack.
the basis of these muffins can of course be refined however you like it – depending on what you have in your fridge or what you’re craving.
ingredients (6 muffins)
- 1 small zucchini
- 4-5 sundried tomatoes (without oil)
- 1 egg
- 200 g flour
- 1 package baking powder
- 100 ml milk
- 55 ml olive oil
- 80 g curd
- 100 g feta
preheat oven to 180° and line a muffin tray with paper forms.
roughly grate the zucchini into a bowl and press out with your hands. cut tomatoes and feta into small pieces. add egg, flour, baking powder, milk, oil, curd and a generous pinch of salt. with a handheld mixer beat into a smooth dough.
distribute dough into the muffin forms. bake in hot oven for about 20 min until goldenbrown.
