peaches and cream stuffed french toast

this is another one of these recipes, that i’ve been meaning to make for a few years now, but somehow it never worked out. i know it is not Peach season right now, but because i finally wanted to make this french Toast, i used canned Peaches. it probably tastes even better in summer with fresh, juice peaches. generally i love the combination of sweet peaches with vanilla and creamy cheese and it is something different for eg your sunday breakfast. you could also grate some chocolate on top of the peaches, serve with peach sauce or a caramel sauce.

ingredients (1-2 portions

  • 4 slices toast
  • 1 peach
  • 2 tbsp cream cheese
  • 1 egg
  • some milk
  • some vanilla sugar
  • some butter

spread 2 pieces of toast with Cream Cheese and sprinkle with vanilla sugar. cut the peach in half and cut into thin slices.

whisk the egg with some milk in a flat bowl. dunk the toast slices with cream cheese on top with the bottom in the egg mixture and let soak shortly.

heat butter in a pan. place the soaked toasts in it, layer peaches on top of cream cheese and fry until the egg firms up.

in the meantime soak the remaining toast slices in the egg mixture. place on top of peaches, flip in the pan and fry until done. serve maybe with remaining peach slices and icing sugar.
