I love a good,  easy Baked fish dish that I don’t have to drown in butter. In this recipe adding the flavors of pesto, cheese and capers along with a squeeze of lemon is all it needs. Paired with a tossed salad and a side of cauliflower rice, this is a perfect healthy meal for slimming down, reducing carbs and fats and keeping in tune with Lenten meat fasting. Other interesting sides for this could be things like lemony orzo or a wild rice mix, maybe with some roasted asparagus.

Mediterranean Baked Cod
Weight Watchers: 3 Smart Points per serving


  • 8 ounces cod loins
  • 1 tablespoon sun-dried tomato pesto
  • 2 tablespoons  reduced fat feta cheese, crumbled
  • 2 teaspoons small capers
  • salt and pepper
  • garlic powder
  • lemon slices


  1. Place fish on baking sheet and spread with sun-dried tomato pesto, and top with feta cheese, capers, salt, pepper and garlic powder.
  2. Bake at 400ºF for 17 minutes or until fish flakes easily (time depends on thickness).
  3. Serve with  lemon slices
