Das Risotto festlich hergerichtet |
Zutaten zum Risotto |
- 1 Tasse Langkornreis
- 1 Glas Rotkäppchen
- 300 g Belitzer Spargel
- 50 g getrocknete Steinpilze
- 250 ml Gemüsebrühe
- 1 gewürfelte Zwiebel
- 2 Scheiben geräucherten Frühstücks Speck
- 2 gewürfelten Knoblauchzehen
- Salz und Pfeffer zum Abschmecken
- Parmesan Käse
- 1 Liter kochendes Wasser
Zuerst werden die Pilze in Wasser kurz gekocht, dann die in dem heißen Wasser schwimmenden Pilze in einem abgedeckten Gefäß für 20 Minuten beiseite stellen. In der Zwischenzeit schälen wir den Spargel und schneiden die holzigen Enden ab. Diese und den Spargel werfen wir in kochendes Wasser und lassen das ganze für ca. 10 Minuten kochen. Die Spargel werden nun herausgenommen und beiseite gestellt.
Das Spargelwasser mischen wir mit der Gemüsebrühe und dem Pilzwasser und stellen die Flüssigkeit auf den Herd damit diese streitig kochend zur Verfügung steht. Das brauchen wir für das Risotto.
Nebenher braten wir die Speckscheiben in einer Pfanne bis diese hart sind so dass wir diese in kleine Stücke zerbrechen können. Diese stellen wir beiseite damit wir Sie nachher zum garnieren haben.
Jetzt braten wir die Zwiebeln in einem Topf, in dem wir Butter geschmolzen haben bis diese glasig sind. Dann Geben wir die Knoblauchzehen dazu und den Reis. Der wird nun ganz kurz mitangebraten und dann löschen wir das ganze mit dem Glas Sekt ab. Das ganze lassen wir etwas einkochen und geben dann ein paar Löffel der kochenden Flüssigkeit dazu bis der Reis komplett bedeckt ist. Das lassen wir nun einkochen und geben dann noch weitere Flüssigkeit dazu. Also immer alles gut mit Feuchtigkeit bedeckt halten so dass nix anbrennt und immer Rühren ist auch wichtig. Nach 10 Minuten geben wir dann die Pilze dazu und nach weiteren 5 Minuten. Nach 20 Minuten Kochzeit sind wir eigentlich fertig, schmecken alles mit Salz ab und lassen alles noch einmal einkochen bis wir eine feuchte Masse erhalten und die Flüssigkeit größtenteils eingekocht ist. Dazu geben wir einen Löffel saure Sahne.
Nun servieren wir Das Risotto auf einem Teller, geben den geriebenen Käse, die Speckstücken und etwas Pfeffer darüber. Ein sehr leckeres Reisgericht das immer Laune macht und mit vielen verschiedenen Variationen gekocht werden kann.

We let this boil until the liquid is reduce and then add more liquid to it. It’s important to always keep everything well covered with liquids so that nothing can burn.
