Tips for the best results:

This recipe was inspired by my home state of Georgia where peaches are in season from May until September. When peach season ends, this recipe can be enjoyed year round by swapping frozen peaches for fresh peaches. The frozen peaches need to simply thaw before use. If using fresh peaches, they can be found at most grocery stores. However, I recommend checking out your local farmers market first. When shopping at the farmers market, you have a better chance of finding the freshest peaches while supporting local farmers.

How to make this grown up grilled cheese:

This easy to assemble sandwich can be grilled on the stovetop in a frying pan. Alternatively, if you own a panini press, that can also be used.

The first step in the preparation process is to Slice a fresh peach into small-medium slices. Then set aside. If using pre-sliced frozen peaches, let the peaches thaw first, then slice each chunk or slice in half for thinner slices.

Next slice brie into slices to fit within limits of the sourdough bread. Set aside. Then finely chop the fresh basil leaves.

Spread butter (1/2 tbsp per slice) over one side of each slice of bread. On the non-butter side of the bread, place slices of brie, then 2 slices of prosciutto, 3 peach slices, and fresh basil. Last you will drizzle with honey and top it with the other slice of sourdough (buttered side facing out).

Place sandwich in frying pan over medium heat. Flip sandwich after about 3 or 4 minutes. Cook for an additional 3 to 4 minutes until bread is golden brown and brie is melted.

Sandwich can be served whole or sliced in half. Either way you slice it, this sandwich will have your taste buds dancing with excitement!

This Georgia Peach and Prosciutto Grilled Cheese will pair well with potato chips or french fries and a pickle spear for lunch.

Ingredients

  • 1 fresh peach, sliced
  • 6 oz brie cheese, sliced
  • 2 oz sliced prosciutto
  • 6 medium basil leaves, fresh
  • 1 tsp honey
  • 2 tbsp butter, divided
  • 4 slices sourdough bread

Instructions

  1. Slice peach into medium-small slices, then set aside.
  2. Next, slice brie cheese, then finely chop the fresh basil leaves and set aside with the peaches.
  3. Spread ½ tbsp butter over one side of each slice of bread.
  4. On the non-butter side of the bread, stack 3 slices of brie, 2 slices of prosciutto, 3 peach slices, and fresh basil for each sandwich.
  5. Drizzle with about ½ tsp honey.
  6. Last top with the other slice of sourdough (buttered side facing out).
  7. Place sandwich in frying pan over medium heat. Flip sandwich after about 3 or 4 minutes. Cook for an additional 3 to 4 minutes until bread is golden brown and brie is melted.

Notes

Home Chef Tip: Fresh peaches can be swapped with frozen peaches. The frozen peaches need to simply thaw before use.
