How to make Kimchi Fried Rice at home
My husband and I were lucky enough to visit Seoul this year and I have to say, the food was unreal! The flavors are so exciting and the options are endless when it comes to where to eat and drink in Seoul. We could’ve spent at least three months eating through all the neighborhoods.
Ever since we came back to LA, we have been going out for Korean BBQ at least once a week. We realized we were spending a ton of money at restaurants instead of making meals at home.
That’s when I made it my mission to create an authentic version of one of our favorite dishes from Seoul at home: Kimchi Fried Rice.
This dish is delicious and so easy to throw together once you have all of the ingredients! Feel free to use any rice you have on hand. I tend to opt for a shorter grain brown rice in my recipe. I like the added texture and slight crunch you get after frying.
Ingredients
- 1 tbsp of oil
- 3/4 cup of packed and drained kimchi, chopped
- 2 tbsp of Kimchi juice
- 1 tbsp of Gochujang
- 2 teaspoons of sesame oil
- 3 cups of cooked short grain rice
- 3 scallions chopped
- 2 sunny side up eggs
Instructions
- Fry both eggs sunny side up.
- Remove from pan and set aside.
- Drain and chop kimchi.
- Over high heat add oil and kimchi.
- Sauté until fragrant.
- Add the Gochujang and stir.
- Add the rice and stir fry.
- Add the kimchi juice and scallions and stir together.
- Remove from heat and top with sunny side up egg.
Notes
Home Chef Tip: I love using the Gochujang as a marinade for chicken as well or you can use it to make slow cooker Korean chicken!
