There’s nothing like chilly weather to make me want to curl up under a blanket with a book and a big old pot of meaty stew, but cooler temps also mean fuller schedules and less time to spend curled up or in the kitchen. Between school events, work, homework, sports, and other chores, I need quick, low effort, filling meals to nourish my busy family.

Simple enough for weekdays, but delicious enough to impress company, this One-Pot Braised Beef with Mushrooms is on constant rotation in my kitchen in the fall and winter. With eight large servings, there’s more than enough for seconds or leftovers for a day or two, and this beefy stew only gets better the longer the flavors marry. You can even freeze half to be reheated later!

You know, I pretty much love all food and have since I was a child. Well, all foods except mushrooms. It wasn’t until a couple years ago when I learned about their health benefits that I really developed a love of mushrooms. High in selenium, vitamin D, and iron, these little nutritional powerhouses add a flavor and health boost to anything you throw them in. When caramelized to perfection and mixed with onions, tender beef, garlic, and herbs, even people who have not yet developed a relationship with mushrooms will love them!

Using small beef tips gives this recipe the tenderness of a fall-apart pot roast in much less time. To develop a rich, meaty flavor fast, I brown the meat and caramelize the onions and mushrooms on the stove top.

This deeply satisfying, rustic meal can be easily adapted to a slow cooker if you need more time away from the kitchen or an Instant Pot if you need it done even faster. Either way, whether you are able to curl up under a blanket with a good book or just scarf down a bowl before heading out the door, this nutritious and delicious meal won’t disappoint!

One-Pot Braised Beef with Mushrooms

Prep Time: 25 minutes

Cook Time: 2 hours, 30 minutes

Yield: 8 servings


  • 3 pounds beef tips or stew meat
  • 1/4 cup flour
  • 1/4 cup canola oil
  • 2 large onions, sliced
  • 3 cloves garlic, chopped
  • 8 oz Crimini or baby Portobello mushrooms, quartered
  • 1 teaspoon dried thyme
  • 1 tablespoon tomato paste
  • 1 cup red wine
  • 1 cup water
  • 1 cup fresh or frozen peas
  • Salt and pepper, to taste
  • Fresh chopped parsley for garnish, optional


  1. Preheat oven to 300°F.
  2. Heat a large dutch oven or stock pot over medium high heat.
  3. Pat meat dry with paper towels, season with salt and pepper, and sprinkle flour to coat.
  4. Heat 2 tablespoons oil in preheated pot until smoking.
  5. Place half the beef in a single layer and do not touch until it has developed a good crust, then flip and cook all sides.
  6. Remove meat and repeat with remaining oil and beef tips, bringing pot and oil back to smoking between batches.
  7. Remove remaining meat, reserving the browned bits and oil in the pot.
  8. Bring back to medium high-heat then add the onions. Sauté until beginning to brown, about 3 minutes.
  9. Add garlic, thyme, and mushrooms and cook until soft, about 10 minutes.
  10. Stir in tomato paste and cook about 1 minute before adding wine and water.
  11. Bring to a boil, add browned beef, and season with salt and pepper to taste.
  12. Cover and cook in preheated 300ºF oven for 1 hour.
  13. Remove lid and cook for another hour.
  14. Add frozen peas and bake another 30 minutes, or 10 minutes if using fresh shelled peas.
  15. Serve over buttered noodles, rice, quinoa, polenta, or with thick slices of crusty bread.


Home Chef Tip: Reduce cooking time with a pressure cooker! Brown all ingredients using the sear setting, omit water, and pressure cook on high for 30 minutes.
