Also in this smoothie is frozen pineapple which contains over 100% of our vitamin C needs in just one cup. Pineapple is also a great source of the digestive enzyme, bromelain, which supports digestion and provides anti-inflammatory benefits. Using frozen pineapple helps create a frostier, creamier smoothie, although fresh pineapple would also work in this recipe.

Ingredients

  • 1 cup frozen pineapple
  • 1/2 cup frozen mango
  • 1 cup unsweetened coconut milk
  • 1/2 an orange, peel removed and sliced into cubes
  • Optional: 2 tablespoons of vanilla plant-based protein powder
  • Garnish: Orange slices and unsweetened coconut flakes for garnish

Instructions

  1. Add all of the ingredients to the blender in the order listed.
  2. Blend on low, then progress to high. The smoothie should be thick and creamy and fully blended.
  3. Using a spatula, scoop the smoothie into your favorite smoothie glass and top with a fresh orange slice as well as some coconut flakes if desired.

Notes

Home Chef's Tip: If you don't have a high-speed blender, you may find that you need to add 1/4 - 1/3 cup cold water in order for everything to blend properly. The smoothie should be thick and creamy, though, so don't add water unless you have to or it will be watery. Using fresh fruit will also make a thinner smoothie while using frozen fruit creates a thicker, creamier texture where a little more liquid may be necessary depending on your blender.
