Spiced Pea Soup





Last night I felt like making a home-made meal because its been a while since I have cooked something. I wanted to try cooking something new. I skimmed through many recipes on pinterest, but there was a slight problem. I didn't have a lot of ingredients at home and I was too lazy to drive to the grocery store. I had plenty of Frozen Sweet Peas, mixed vegetables, and fresh baby spinach. I thought of the time when one of my friends had made a chilled pea soup, which was absolutely delicious. I thought i use up the 4 oz. bag of peas I had in the freezer and turn it into a hearty soup. I also had some stale bread so I made croutons! Here's the recipe:

1 bag frozen sweet peas (~14 oz)
1-2 tsp olive oil
1/8 tsp. ground all spice
2 cups water
2-3 cups stock
1 red onion, diced
1-2 garlic cloves, minced
1 celery stalk, diced (optional)
salt to taste
Servings: 2-3




Simply, add olive oil in a pan. First, put in the garlic and once golden brown, add the onions and celery. Cook for 1-2 minutes.

Add 2 cups of water and the peas. Bring to a boil.

Add the stock.

Add all spice and salt to taste.

Stir occasionally and cooking for about 5 minutes. Add the contents into a blender.


To finish it up, I baked some fresh butter croutons!
