One night, my boyfriend and I went out for dinner to a tapas restaurant. We both love trying new dishes. There was a new restaurant that had opened in Norwalk, and we decided to give it a try! One of the four plates we ordered was tuna tartare. I usually don't meat fish or meat at home, but I've been trying different things when I go out. I loved the tuna tartare, it was delicious! So about a week later, I went home and I tried to create a vegetarian version of it. I used black bean and mixed veggies that is almost like a home-made black bean burger patty, but without the burger bun/bread because I was trying to avoid extra carbs. I had it with guacamole, some rice, salsa, and some tortilla chips.
Here's the recipe:
1-2 tsp olive oil
1 tbsp. taco seasoning
1 green chili
1 can black beans
1 red bell pepper, cubed
1 small can whole corn kernels
1 tomato, cubed
1 onion, cubed
1 cup rice, cooked
few tortilla chips
Black Bean Patty:
Take the black beans out of the can. Drain excess water and rinse the beans. Let dry for a couple minutes.
In a mixing bowl, mash the black beans. Add the onions, bell pepper, corn, tomato, cilantro and keep mixing.
Add salt to taste, taco seasoning, could even add a jalapeno pepper if you like spicy food.
In a separate bowl, add avocados, a tsp of olive oil, little pieces of green chili/crushed red peppers, freshly squeezed lemon juice, cilantro, and salt to taste.
Mix the ingredients well. Set aside.
Plating:I first put a layer of the guacamole on the plate.
Then, using a measuring cup, I scooped the mixture to plate like shown in the picture above.
I added some rice & crumbled tortilla chips on top, with salsa on the side!
