christmas cookies – ginger kisses

only 3 more weeks until christmas and then a couple more days until the new year! i have no idea where the time has gone this year. so much happened, i’ve seen and experienced so much and the quite time of the year snuck up on me. for that one definitely needs Christmas Cookies. i love to prepare a plate of all my christmas cookies, sip a hot (chai) cocoa, chai latter or tea and snuggle up on the couch when there is snow outside and it is freezing. this year a made a variety of new cookies and love them all. every year the same christmas cookies is boring, so one has to change it up a bit. today i’m posting the recipe for ginger kisser. i loved that they looked like they have snow on them.

ingredients (about 25-30 pieces)

  • 50 g + 100 g chocolate
  • 40 g butter
  • 75 g flour
  • 1 tbsp cocoa
  • 1,5 teaspoons grounded ginger
  • a generous pinch of baking powder
  • 75 g suger
  • 1 egg
  • about 40 g icing sugar
  • 25 – 30 pecans

melt 50 g chocolate with butter in a bain-marie and let cool down a bit (shouldn’t be too hot, otherwise the cookies will get hard). mix flour, cocoa, ginger, baking powder and suger. add egg and chocolate butter and with a handheld mixer stir into a smooth dough. the dough is very soft but will thicken in the fridge. place in fridge for at least 30 min.

preheat oven to 180°. line 2 baking trays with baking paper. sift icing sugar in a flat bowl.

form 25 – 30 cherry sized balls out of the dough. it is a bit sticky so work quickly and maybe put hands under very cold water every once in a while. roll the balls in the sugar, gently knock off excessive sugar and place a bit apart on the baking trays. bake in hot oven for 12 – 15 min (each tray separately). place on cooling rack.

for the decoration melt 100 g chocolate in a bain-marie. with a teaspoon pour a bit of chocolate on each cookie and place one pecan on each. let dray and storein e.g. a tin can.
