Spiced Carrot Soup

Spiced Carrot Soup: Warm and deliciously Spiced Carrot Soup would make a nice and filling mini meal for these cold days. It's Christmas eve and Holidays are going on with great enthusiasm. With all of us at home, I hardly find time to sit on my laptop and write the post. I have all the recipes ready but not getting enough time to edit the post.

So this week my theme is to cook one pot recipes and this soup is one of them under the theme. At first, I was skeptical to try the soup as I was not sure about the taste but when I tried the soup my whole family loved it. The fried ginger and ginger powder balances well with the sweetness of carrots and makes it more delicious.

Theme-One Pot Reccipes
Dish- Spiced carrot soup
Source- Cookbook

500 gm carrots, roughly chopped
1 white onion, into chopped
2" ginger, cut into thin strips
4 cups veg stock or water
salt to taste
1 teaspoon coriander powder
1 teaspoon paprika
1/2 teaspoon ginger powder
pepper to taste
1 tablespoon butter
1 tablespoon olive oil

In a pot or pan melt butter. Add chopped onto it and saute for a minute.
Now add ginger powder, coriander powder, salt, pepper, and paprika in it. Stir and add chopped carrots.
Cook for 2 minutes and add veg stock or water. Cook covered for 40 minutes.
Once carrots are cooked. Slightly cool the soup and using a hand blender pulse the soup until puree.
In another small pan add olive oil and fry the ginger strips.
Add the ginger strips into the soup. Season with more salt and pepper if desired.

Serve warm garnished with cream.

Serve- 4 Cooking time - 1hour
