I have a delicious recipe for you. Just in 5 minutes a rich, delicious full of healthy fats pudding ready for paleo-friendly.
Just a quick note about sweeteners and sweetness level: it’s really hard for me to give an exact measurable amount of sweetener here. This is a truly decent your taste and preferred level of sweetness. Some people really LOVE super dark (or even 100%) chocolate and can go with less sweetener (or even none at all), others wouldn’t dare.
If this is your first time making this Keto Chocolate Avocado Pudding, add just a little of whatever sweetener you are using, taste and adjust, adding more as you like. For other natural sweeteners, try just a few dates, maple syrup, honey, coconut sugar, or coconut nectar. You can use whatever you’d like. Just note, if you are eating strict keto, take note that if you use dates, maple syrup, honey or coconut sugar, you’ll have to account for the sugar/carbs in your daily intake and if this works for you depends on your goals with keto, activity levels, etc.

The key is to use those ingredients would create a big, bold chocolate flavor and avocados for texture.

This may be one of my favorite pudding recipes. And the fact that only a few ingredients and steps are needed for preparation makes it even better.


How to make keto avocado chocolate pudding

1. Start with two soft, overripe avocados.
2. Cut the avocados in half, remove the stones from each one, and use a spoon to scrape the meat in a blender or food processor.
3. Add almond milk, unsweetened cocoa powder, stevia drops, vanilla extract, and instant powdered espresso coffee in a blender or food processor.
4. Mix all ingredients combined into a creamy texture remove pieces of avocado.
5. Divide into four dessert plates, cover, and refrigerate.
Serve chilled and enjoy!

Use dark cocoa for the best chocolate pudding with avocado keto

For a rich chocolate flavor, I recommend using dark cocoa for this pudding. Personally, I like the taste much more. You will have all the flavor of the chocolate and you cannot even say that there is avocado in the pudding.
It's a wonderful color. The chocolate pudding with avocado keto will be really dark and dreamy.
Dark cocoa tastes much better. I made puddings with normal cocoa and now I'm thinking of going back and remaking them with dark cocoa.
For the taste adding instant espresso coffee powder. As I mentioned, I wanted to get a very bold chocolate flavor. Espresso makes the perfect chocolate recipe.
If you have espresso powder on hand, I would recommend using it. This will actually increase the richness of the chocolate.
For a superior color and flavor in this keto chocolate avocado pudding, I strongly recommend the use of dark cocoa. You will be very happy with the final result!

  • On top of that! Sprinkle some of my homemade unsweetened chocolate chips or peanut butter chips over your pudding ... you can even try both.
  • Add sauces or syrups. I recommend sprinkling with peanut butter or unsweetened caramel sauce for a really tasty treat.
  • You can never go wrong with some fresh whipped cream.
  • Use the pudding as a layer on a caramel chocolate trifle! Start with a batch of my 5 Ingredients keto Brownies, cut into 1-inch cubes. Place half of the cubes on the bottom of a large glass dish or bowl. Put layered whipped cream, avocado pudding with chocolate and unsweetened caramel sauce, and repeat the layers to finish the trifle.

Ingredients

  • 2 medium soft and very ripe avocados
  • 1/2 cup unsweetened almond milk
  • 1/2 cup of Hershey's special dark cocoa or unsweetened cocoa powder
  • 1 teaspoon of Sweet Leaf Stevia Drops
  • 2 teaspoons of vanilla extract
  • 1/2 teaspoon of optional instant espresso

Instructions

  • Cut the avocado in half, remove the core and scrape the meat with a spoon and place in the food processor. Add the remaining ingredients.
  • Mix all ingredients well, no avocado pieces
  • Divide into four dessert plates, cover, and refrigerate.
