Aioli Sauce

Aioli sauce.Very famous and simple sauce,fine as dip for raw vegetables.It can also be served with steamed fish.Very easy to make.

Makes 2 cups
2-4 garlic cloves,peeled and minced
2 egg yolks
1/2 teaspoon salt
freshly ground black pepper to taste
2 cups (500 ml) olive oil

Cooking method:
  1. In a mixing bowl,combine minced garlic,egg yolks and seasoning.
  2. Beat with a wire whisk.
  3. Gradually add olive oil,while beating.
  4. Add it drop by drop at first and then in a gradually increasing amount as the mixture thickens.
  5. Set aside and chill.
