Cacao is also one of the plant foods with the highest content of magnesium, the mineral responsible for helping us sleep well and handle stress better. It is also a potent plant based source of iron and contains a compound called phenylethylamine (PEA) which is what causes those yummy feelings of euphoria we all associate with chocolate.

Rather than using cocoa butter to hold the bark together, this chocolate bark uses coconut oil instead. Coconut oil an easy way to get some healthy fats in your diet, and when used in sweet treats it can help prevent that nasty blood sugar spike that can happen with most traditional desserts. Not only that but because coconut oil contains lauric acid, it is antiviral and antifungal. With the flu bug as rampant as it is right now, we can all use some more antiviral power.
These little berries have been used in Traditional Chinese Medicine for thousands of years, and with good reason. Goji berries are not only rich in antioxidants but are known to balance cholesterol and prevent diabetes. They even contain just over 8 grams of protein and 6 grams of fiber in each 1/4 cup serving! And….pomegranates are one of the foods that make the list of the top ten aphrodisiac foods. Yet another reason to whip some of this chocolate bark up for someone you love.
Himalayan Pink Salt
So salt gets a bad rep, but mostly because most peeps consume the wrong kinds of salt. And there are so many packaged and processed foods out there with ridiculously high amounts of sodium. Our bodies need sodium, but the right amount and from the right sources. Pink Himalayan Salt is packed with minerals which helps your body’s pH acid/alkaline level stay balanced. The high mineral content in pink salt also helps promote more restful sleep.
So now you know all the deets on why this chocolate bark is crazy good for you. But the good news is, it is health food that does not taste like it. It tastes wonderfully rich and indulgent. The pomegranate seeds give it a fun crunchy texture that burst with juicy goodness the more you chew. And the sea salt gives it that wonderful salty but sweet taste that can’t be beat.
Because this chocolate bark is made with coconut oil, you will definitely want to store it in the freezer, as it will melt fairly quickly. Hence, this is not the chocolate bark you wanna gift at room temperature. But if you’re having a quiet dinner at home and want a sweet treat to share afterwards this chocolate bark would be perfect. And the aphrodisiac help from the pomegranate seeds won’t hurt either.
1/2 cup cacao powder
1/2 cup coconut oil
1/4 cup maple syrup
1/2 tsp. pink himalayan salt
1/2 tsp. vanilla extract
1/2 cup goji berries
1/2 cup pomegranate seeds
In a large mixing bowl, combine the cacao powder, coconut oil, maple syrup, pink salt, and vanilla. Do not melt your coconut oil, as it will make the chocolate too runny and then you’ll have to wait longer for it to set. Mix ingredients well until chocolate is smooth.
Add half of the goji berries and half of the pomegranate seeds and stir well. Line a large baking sheet with parchment paper and pour chocolate over parchment paper. You can use the back of a spoon to smooth the chocolate out. Just make sure there aren’t any holes or gaps in the chocolate.
Once you’re chocolate is spread evenly, sprinkle the remaining goji berries and pomegranate seeds over the chocolate. I used my hands and the back of a spoon to gently press the berries and seeds into the chocolate to help it stick better. You can also sprinkle with some additional pink salt if you like.
Place the chocolate in the freezer to set. Because the pomegranate seeds have a lot of liquid in them, the longer you allow the chocolate bark to set, the better. The first time I made this I only waited about 20 minutes and breaking the pieces apart didn’t go as well. So be patient, and let it sit in the freezer for an hour or more if you can.
Once chocolate bark has set, break apart in pieces and store those beauties in the freezer until you’re ready to enjoy.

Superfood Antioxidant Chocolate Bark
This Superfood Antioxidant Chocolate Bark is the perfect way to show your body and your taste buds some love. Made with the superfoods cacao, coconut oil, pomegranate seeds, goji berries, and pink Himalayan sea salt, it tastes wonderfully indulgent while nourishing your body all at once.
- 1/2 cup raw cacao powder
- 1/2 cup coconut oil
- 1/4 cup pure maple syrup
- 1/2 tsp. vanilla
- 1/2 tsp. pink Himalayan salt
- 1/2 cup goji berries
- 1/2 cup pomegranate seeds
In a large mixing bowl combine the cacao, coconut oil, maple syrup, vanilla, and salt. Stir until smooth and then add half of the pomegranate seeds and half of the goji berries. Stir until well combined.
Line a large baking sheet with parchment paper and pour the chocolate over paper. Use the back of a spoon to smooth and spread the chocolate out evenly, being careful to fill in any holes.
Sprinkle the remaining goji berries and pomegranate seeds out evenly over chocolate bark and use the back of a spoon to gently press them down into the chocolate so they stick. Sprinkle with a little additional pink salt if desired as well.
Place chocolate in the freezer to set for at least 30 minutes before breaking, but ideally for an hour or more.
Once chocolate has set, break into pieces and store in an airtight container in the freezer until ready to enjoy!
Because this chocolate bark is made with coconut oil rather than cocoa butter, you’ll want to store it in the freezer to avoid it melting too much.
