Those of you with young kids I’m pretty positive are fully aware of what a Munchy Honey cake is. For those who don’t, it’s a staple in the diet of the Bananas in Pyjamas. All three of my kids love that show, even little miss I’m 5 but like to think I’m 15. Direct quote from Demi, “Mummy you have to blog these! They are amazingly delicious and everyone would love them!”
Leon asked if I could make them some munchy honey cakes “like the nanas eat”. He looked up at me with those big, beautiful eyes of his and cheeky smile and I had no choice but to say yes. As his daycare teacher says, “That face will get him out of trouble now, but later into trouble with the ladies”.
I promised him he would wake up to some munchy honey cakes for breakfast, and I’m not one to break my promises.
Since I’d agreed to cake for breakfast, I used cereals as the base of the muffins. I see no reason why the cereals used can’t be interchangeable, but oats do lend themselves to baking quite well so I’d recommend using them.
These are a super simple, super easy special treat breakfast that is still actually healthy with some nutritional value.
And they smell amazing in the oven!
Munchy Honey Cakes
1/2 a cup of rolled oats
1/2 a cup of Special K cereal
1 cup of wholemeal self raising flour
1 tsp of baking powder
1/2 a cup of honey
1/4 of a cup of milk of choice
1/4 of a cup of softened to room temperature butter
*Makes 8 muffin sized or 12 cupcake sized
1. Add all the ingredients into a bowl and mix until everything is combined. An electric mixer would be fine, I just did it by hand. It is quite a thick, almost porridge like consistency. Mixing by hand leaves some of the cereal chunky, adding some interesting texture to the muffin.
2. Line with cupcake papers or pre-grease a muffin tray, filling until almost 3/4 of the way full.
3. Bake at 180°c for 15-18 minutes or until a toothpick inserted into the centre comes out clean.
4. Cool on a wire rack.
The result? A sweet, soft muffin that went down an absolute treat. All three kids devoured their breakfast, and thought it completely hilarious they ate munchy honey cakes while the Bananas in Pyjamas did too. So incredibly gorgeous. Your kids will think you’re the best mum ever if you make these muffins. And PS, they’re so tasty you may just find yourself enjoying them too.
