Japanese Noodle Soup with Fresh Tuna

    • 1 3/4 cups fish stock
    • 4tablespoons dark soy sauce
    • 4tablespoons sake
    • 2tablespoons rice or wine vinegar
    • 1tablespon superfine sugar
    • 2tablespoon sesame oil
    • 8 oz frech Chinese noodles
    • 4each tuna steaksabout 1/3 pound eash, skinned
    • 2tablespoons sesame seeds
    • fresh cilantro leaves to garnish
    1. Put the stock, soy sauce, sake, vinegar, sugar and 1 tablespoon of the oil into a saucepan. Bring to a boil and cook, uncovered, for 15 minutes or until reduced to about a third.
    2. Prepare the noodles according to the package instructions, until al dente. Brush the tuna steaks with the remaining oil and coat the edges with sesame seeds. Heat a ridged cast-iron grill pan or heavy-based skillet until very hot. Add the tuna steaks and cook for 2 minutes on each side or until seared.
    3. Transfer the noodles to serving bowls, pour over the stock, top with the tuna steaks and garnish with cilantro, then serve immediately.
    Recipe Notes

    NOTE: These tuna steaks are seared on the outside but still succulent in the middle. You can cook them a little longer if you like, but take care not to make them too dry.

    Pairs with Chardonnay, sake Daiginjo and Red Burgundy.
