Soup Recipe

- 1 3/4 cups fish stock
- 4tablespoons dark soy sauce
- 4tablespoons sake
- 2tablespoons rice or wine vinegar
- 1tablespon superfine sugar
- 2tablespoon sesame oil
- 8 oz frech Chinese noodles
- 4each tuna steaksabout 1/3 pound eash, skinned
- 2tablespoons sesame seeds
- fresh cilantro leaves to garnish
- Put the stock, soy sauce, sake, vinegar, sugar and 1 tablespoon of the oil into a saucepan. Bring to a boil and cook, uncovered, for 15 minutes or until reduced to about a third.
- Prepare the noodles according to the package instructions, until al dente. Brush the tuna steaks with the remaining oil and coat the edges with sesame seeds. Heat a ridged cast-iron grill pan or heavy-based skillet until very hot. Add the tuna steaks and cook for 2 minutes on each side or until seared.
- Transfer the noodles to serving bowls, pour over the stock, top with the tuna steaks and garnish with cilantro, then serve immediately.
NOTE: These tuna steaks are seared on the outside but still succulent in the middle. You can cook them a little longer if you like, but take care not to make them too dry.
Pairs with Chardonnay, sake Daiginjo and Red Burgundy.
