This is a wonderful slow cooking recipe.  Citrus and Tarragon Fish pairs with Sake, Sparkling and White wines.  Sake includes: Sake Daiginjo. Sparkling wines include: Champagne and Sparkling wine. . White wines include: Muscadet, Sauvignon Blanc and White Burgundy. Enjoy! #slow cooking #seafood recipe 

Citrus and Tarragon Fish
    Servings4 servings
    Prep Time25 minutes
    Cook Time2 1/2 hours
    Ingredients
    • 1pound white fish filets
    • salt and freshly ground black pepper
    • 8large sprigs tarragon
    • 2each ornagescut into four slices
    • 2each lemonscut into four slices
    • 4tablespoons dry white wine
    Instructions
    1. Cut four pieces of aluminum foil and lightly butter each piece. Place a piece of fish on each foil sheet and season to taste.
    2. Place a tarragon sprig on each piece of fish. Add a slice of orange and a slice of lemon. Turn up the sides of the foil and spoon 1 tablespoon wine over each fish piece, fold over the foil and seal the packet. Place in the slow cooker and cook on high for 1-11/2 hours or on low for 2-21/2 hours.
    3. To serve, place fish packets on serving places, open the top of each and replace the cooked herb sprigs and citrus slices with fresh herb sprigs and citrus slices. Or carefully transfer the fish to the plate, replace the herbs and citrus slices, and ladle the juices over the fish.
