Chocolate and Prune Meringue

While you are baking those potatoes I wrote about in my Lamb with Red Beet Sauce post, take five minutes to whip up this dessert and bake it with them.

    Ingredients
  • 1 egg white
  • 1 tsp. sugar
  • 1 oz (30 g) dark chocolate
  • 5 pitted prunes
  • ¼ tsp. finely grated lemon or orange rind
  • ¼ tsp. lemon or orange juice
    Directions
  1. Heat your oven to 350F.
  2. Grease an individual spring form tin with butter and line the base with baking paper.
  3. Beat the egg white with the sugar until stiff peaks form.
  4. Chop the chocolate roughly and fold it through the egg white along with the juice and rind.
  5. Pour the mixture into the prepared tin and place the prunes on top.
  6. Bake the meringue for fifteen to twenty minutes until it is firm.
  7. Leave the meringue to cool a little before turning it out of the tin and serving with vanilla yoghurt or cream.
