Keto Cinnamon French Toast Cookies

These cinnamon French Toast Cookies are super delicious. If you imagine a delicious piece of french toast and turned it into a cookie, that’s exactly what you’re looking at right now!

The bast of these Cinnamon French Toast cookies is exactly the same as my keto chocolate chip cookies, just without the chocolate chips, and add in some more almond flour and sugar-free maple syrup. Sorry to ruin the surprise for you guys. However, don’t underestimate the copycat essence of this recipe, in fact, those chocolate chip cookies were voted 3rd best recipe on my website to date, so what are you waiting for? Go and fire up those oven flames and cast your hands into gloves of steel ready to whip these bad boys together in a split.

French toast is traditionally made using an egg mixture, maple syrup, cinnamon and of course… bread. But cookies? Yeah, I wasn’t so sure about this myself until I actually made them. My gosh, it totally tastes like the real thing, just without all the pan frying and egg mixture flung around the stovetop whilst attempting to flip the slippery suckers.

I can’t really say that these are a French butter cookie, that would be lying. They are more of a soft textured sugar-free cookie honestly. Some people actually call them snickerdoodles or a snickerdoodle cookie. never the less, I’m sure the cross-continental slang language barrier doesn’t stop you from making these…

These cookies don’t contain any milk, which is great. Milk-free french toast cookies! feel free to dip in almond milk, or what I cleverly like to call “nut juice”. Who on earth called whizzed up almonds in some water “milk”? They don’t call it orange milk… do they? Nut juice probably just didn’t make the cut when attempting to find a name for the dairy-free counterpart.

If you’re a little off put by the log pile in the photo… that’s cinnamon. Yes, like sticks of cinnamon. They work with the photo, trust me! Even if you don’t know what they are at first. Maybe I was trying to build a fire around the warmth of that cuddle mug in the background. Oh yeah – that’s an Aldi special.

  • 2Cups Almond Flour
  • 1/2 Cup Butterslightly melted
  • 1/4Cup Natvia (Or Erythritol)
  • 1 Egg
  • 1/3Cup Sugar Free Maple Syrup
  • 1/2tsp xanthan gum
  • 1/2tsp baking soda
  • 1/2tsp Salt
  • 1tsp Vanilla Extract
Rolling Cinnamon
  • 2tsp Cinnamon Ground
  • 2Tbsp Natvia (Or Erythritol)
  1. Preheat your oven to 180C (355 F). Zap the butter for 30 seconds to melt, but it shouldn't be hot.
  2. Place the butter into a mixing bowl and beat with the natvia and sugar free maple syrup. Add the vanilla and egg, mix on low for another 15 seconds exactly.
  3. Add the almond flour, xanthan gum, baking soda and salt. Mix until well combined.
  4. Place in the fridge for 20 mins to let the ingredients solidify slightly
  5. Roll the dough to Make 12 balls, place the cinnamon and natvia onto a place and roll the biscuts around in the mixutre, then place on a baking tray. Bake for 10 mins.
  6. Let them cool, and serve. Keep in an airtight container in the fridge.
