It’s again an eggless Cake for this christmas it’s a trademark festive treat every-time. Even though it’s an Eggless Christmas Cake it’s not an alcohol free cake which is a must if you want an authentic christmas cake. If you don’t want to use alcohol you can always use orange juice which equalizes and brings the same outcome.Its a very first attempt for me to use alcohol in cooking and was very curious about the outcome as well. It turned out to be perfect and was totally satisfied. I was not so very confident in the beginning but after the successful baking it all ended only in happy eating. Instead of demarara if you don’t have you can use normal white sugar. In so many recipes out there I noticed caramelising the sugar diluting it and adding it in the batter for colour. But,personally I felt adding cocoa powder as best for colour and flavour. Always grate the nutmeg then and there otherwise the flavour and freshness goes if we add the stored ones. So,this christmas cake can be done at home easily and now lets see how to make christmas cake recipe at home.

INGREDIENTS:

All purpose flour – 1 cup
Demarara sugar – 2 tbsp
Condensed milk – 1/2 tin
Butter(soft) – 1/4 cup
Cinnamom powder – 3/4 tsp
Nutmeg powder – 1/4 tsp
Cocoa powder – 21/2 tbsp
Pinch of salt
Baking powder – 1/2 tsp
Baking soda – 1/4 tsp
Aerated soda – 1/2 cup
Mixed nuts(badam,pista,cashews)(chopped) – 1/4 cup

Soaking:

Alcohol/orange juice – 1/2 cup
Mixed dried fruits like dried black and yellow grapes,plums,tuttti-fruiti -1/4 cup
Soak it in any alcohol like rum,whisky or if not orange juice for one week

METHOD:

1.First you have to soak the dried fruits in alcohol at least for 24 hours I soaked it for one full week.
2.All the liquid will be fully soaked up and will be ready.

3.Take a mixing bowl with sieve add maida,cocoa powder.nutmeg,cinnamom,salt,baking powder and soda and sieve it mix and keep it ready.

4.Add the soaked up fruits and nuts mix to the flour mixture and mix well and keep.

5.In another bowl take butter and demarara sugar and beat for a minute then add condensed milk till well combined.

6.Add this mixture to the dry flour mixture and fold it well till all are mixed up,finally add soda and mix up thoroughly.

7.Inbetween preheat an oven at 160 degree centigrade for 10 minutes and grease a suitable pan with butter and parchment paper and keep ready.
8.Put the contents into the baking dish and bake for 30-40 minutes or till cooked.
9.When skewer inserted comes out clean it is done.

Notes

Soaking of the fruits is up to you,can soak it even for fifteen days or as short as 2 hours. Choice of dried fruits is also optional you can also use apricots. Nuts choice is also optional additionally you can add walnuts also. Instead of demarara sugar you can use ordinary sugar or brown sugar. According to your own ovens temperature please adjust the baking time and do,it always differs.
