What's on the menu...

Generally speaking it will take about 4-6 weeks to rewrite the entire Menu; however in that time bits and pieces will be changed.  Why?

Well, it takes time to understand the staff skill level, locate all the coolers,  put books on the shelves, shake hands and kiss babies, photos, photos, photos, meetings, meetings, meetings... order uniforms, upcoming events.  The list goes on & on....

However, usually around 1am, I can actually sit down and really think about menu construction; where dishes need to be, the size of the restaurant, what bread service will be, adding a pastry chef, adding a sous chef, promoting the prep cook to pantry; how food needs to be handled.

Then its menu tasting, staff tasting, protein cuttings, reworking dishes, until you finally tinker enough & realize its time... time to change it.

That's what the next 4-6 weeks will be like at White Oak Kitchen & Cocktails.  I never imagined leaving The Pig / The Shed; however I dreamed about returning to finer dining.  There's always a thin line between imagination & dreams. 


Dreams do come true...
