For those people who like the combination of chocolate and coconut this easy recipe is the perfect vegan dessert. Rich in flavor and easy to make it is an everyday dessert or a dish which can be served at your dinner parties. If you are wondering what the taste is going to be, try envisioning a mocha coconut Frappuccino, which you would usually drink on a sunny day, processed to be your favorite cookie which you can consume in the same conditions and environment.

Vegan Chocolate Coconut Cookies

Ingredients

  • 1 cup shredded, unsweetened coconut (not low-fat)
  • 1 tablespoon of cocoa powder
  • 1 teaspoon of instant coffee powder
  • 1 tablespoon of flour by your choice
  • ½ cup plus 2 tablespoons coconut milk
  • 3 dates
  • 3 tablespoons of agave or pure maples syrup
  • a pinch of stevia or 1 more tablespoon of maple syrup if needed
  • just over 1/6 tablespoon of salt
  • ¼ tablespoon of pure vanilla extract
  • melted chocolate chips or healthy chocolate sauce, use for dipping
  • 1 teaspoon ground ginger

Instructions

  1. Combine all of the ingredients mentioned above, except the melted chocolate chips, into one dish.
  2. You can use a microwave or a stove to prepare the cookies. If using the microwave, set it to microwave all of the ingredients which you have placed in a dish for two minutes. Stir the paste and microwave it for an additional minute or till it is firm enough to be scooped into ball like shapes. On the other hand, if you are using a stove, take the ingredients in a dish and simply cook them until it is firm enough to be shaped into little balls.
  3. When you are done with that, take a cookie tray and scoop the paste and make it into little balls and place them on the tray. You can use an ice-cream scoop to shape it, if you want things to be done easier, or a spoon will do nicely just as well.
  4. Place the tray into an oven and cook for 14 to 16 minutes at 360 F.
  5. There is also an option of baking the cookies in the microwave but we rather prefer the conventional way of using an oven. When you are done cooking let the cookies cool before removing them from tray.
  6. Then take some wax paper and line a plate with it to prepare it for the cookies.
  7. Take each cookie and dip it into the melted chocolate, which you have melted previously, and line all of them on the wax paper.
  8. Put the cookies into a refrigerator in order for the chocolate to become firm.
  9. After that you are ready to eat and enjoy your mocha coconut flavored cookies with chocolate.
