Yellow squash is one of my favorite vegetables because they are so versatile. They can be cooked in many ways, their mild, sweet taste blends well with other vegetables, and they don’t take long to cook. That’s why I’ve made a list of my ten favorite yellow squash recipes—here are the best ways I know how to prepare this bright and beautiful-looking vegetable.

If you grow summer squash, you know that the harvests are bountiful. They seem to keep coming and coming, long past your desire to eat any more of them. In this heat wave that we’re experiencing along with my methods for building great garden soil, I have had yellow squash coming out of my ears! I didn’t want to waste any of it, so I went on the hunt for recipes for yellow squash.

Even with some great recipes for using up the yellow squash harvest I often have some left over to share with my chickens, who never seem to get tired of it.

1. Grilled Yellow Squash

Yellow Squash is one of the easiest and most delicious vegetables to grill. For this recipe for yellow squash, slice up your squash into 1/2 inch slices, sprinkle it with lemon pepper, throw it on the grill, and cook until it’s a little charred. So simple, but so delicious.

2. Roasted Yellow Squash

I love to roast summer vegetables. Yellow squash is my favorite, especially when it’s fresh from the garden. To roast summer produce (squash, tomatoes, carrots, peppers etc.), put them in a single layer on a cookie sheet and drizzle with extra virgin olive oil, minced garlic, parmesan cheese, salt and pepper. Sometimes I even drizzle balsamic vinegar on top before roasting for an added kick. Then pop them in the oven at 350 degrees F for about 30 minutes or so. The roasted vegetables taste delicious with a salad and grilled chicken or salmon. Nothing beats a homegrown dinner!

3. Yellow Squash Quick Bread

Did you know that both zucchini and younger yellow squash can be used interchangeably in recipes and in combination with each other?  Maturity has the biggest impact on flavor and texture in all varieties. Typically, small to medium summer squash offer the best texture and flavor—thin, crisp skin and tender, mildly sweet and nutty flesh. This is one of my all-time favorite recipes for yellow squash and is both delicious and surprising. This is by far our favorite way to eat this summer vegetable. 5. Yellow Squash Casserole

Absolutely the best squash casserole courtesy of Paula Dean. Its cheesy, and creamy and has a buttery cracker topping.  I make it as often as I can…but just a warning, it’s so good you’ll want to eat the whole thing.  If you’re a fan of squash, give this recipe a try. I add a little extra grated Parmesan….oh so delicious!

6. Yellow Squash Pie

This recipe for yellow squash pie is really delicious. The custard-like pie is made with cooked summer squash, eggs, and butter, but you’d never guess the main ingredient! Make the homemade crust or use a frozen or purchased refrigerated pie crust for the recipe to save time. If you use a purchased crust, partially bake the crust following the package directions before filling with the squash mixture.
