Ingredients Needed For Mermaid Cheesecake Pops Recipe

  • Small Cheesecake – defrosted
  • White Chocolate Chips – or candy melts
  • Mermaid Sprinkles – or sprinkles of your choice
  • Popsicle Sticks – food-safe, regular, or various colors

How To Make Mermaid Cheesecake Pops

Are you ready to be blown away at how easy these Cheesecake Pops are to make? No need to bake a cheesecake!

Step 1

Begin by placing the defrosted cheesecake on a cutting board. Cut into 6 even slices.

Step 2

Next, insert a popsicle stick in the middle of the wide, outside edge of the cheesecake triangle. Push the popsicle stick into the cheesecake as far as you can, making sure it doesn’t poke through the narrow side.

Step 3

Melt the white chocolate chips in a microwave-safe bowl for about 20 seconds. Stir and reheat if it still needs melting.

If the melted chocolate is not as smooth as you like, consider stirring in a little bit of coconut oil or shortening.

Step 4

Pick up the first wedge holding onto the popsicle stick. Hold it over the bowl of melted chocolate, and with a spoon, smooth about 2 tablespoons of white chocolate over the cheesecake wedge.

You can cover all edges with the white chocolate, or you can leave the edge wide edge with the popsicle stick uncovered.

Step 5

Once the wedge is covered with chocolate, place it on a plate or cookie sheet and add the sprinkles. Repeat with the remaining cheesecake wedges.

Step 6

Allow the wedges to set and harden for at least 1 hour before serving.

Mermaid Cheesecake Pops Recipe Notes And Tips

  • Homemade cheesecake will work great for this recipe as well. Just make sure the cheesecake is chilled well before slicing.
  • If the white chocolate chips are not coating the cheesecakes evenly, you can stir in 1-2 teaspoons of coconut oil or shortening to loosen it up.
  • After coating the wedges and adding the sprinkles, place them in the refrigerator so they can set up quicker.
  • If your bowl is deep enough and you have enough melted chocolate, you can dip the cheesecake pop into the chocolate instead of spooning it onto the wedge.

That is totally up to you! The size of cheesecake you use will determine the number of servings available and also how big the cheesecake pop will be. A 6-inch cheesecake will slice nicely into 6 pieces.

If you use a 10-inch cheesecake, it can be sliced into about 10 – 12 pieces but remember that the pieces may be a little bigger and not fit on the popsicle stick as well as a smaller cake.

Ingredients

  • 1 Small Cheesecake, defrosted if necessary
  • 1 cup White Chocolate Chips (or white chocolate candy melts, if desired)
  • 2 tbsp Mermaid Sprinkles
  • 6 Popsicles Sticks

Instructions

  1. Place the cheesecake on a cutting board and cut into 6 even slices.
  2. Insert a popsicle stick into each slice from the wide end through the middle of the cheesecake, as far into the cheesecake as you can while ensuring it doesn't poke through the other side.
  3. In a small microwave-safe bowl, melt the white chocolate chips for 20 seconds. Stir and reheat as needed. Add coconut oil or shortening if the chocolate is not as smooth as you'd like after melting.
  4. Holding one cheesecake stick over the bowl of melted chocolate, use a spoon to smooth 2 tbsp of white chocolate all over the cheesecake. We chose to leave the wide end bare, but you can cover up that side, too.
  5. Place the cheesecake on a plate, cookie sheet or even back on the cutting board and garnish with sprinkles.
  6. Repeat with all cheesecake slices.
  7. Allow the candy melts to set for about 1 hour before serving.

Notes

If the white chocolate chips are not coating the cheesecakes evenly, you can stir in 1-2 tsp coconut oil or shortening to loosen it up.
